Ingredients

  • 2 heads of garlic, separated into cloves and peeled
  • 2 quarts water
  • 1 tbsp olive oil
  • 1 bay leaf
  • 2 sprigs fresh thyme or 1/4 tsp dried thyme
  • 4 sprigs fresh parsley
  • pinch of dried leaf sage
  • 2 tsp salt

Preparation

Step 1

Combine all ingredients in a stockpot. Bring to a gentle boil, then cover and reduce heat. Simmer for 1 to 2 hours. Strain.

It's an excellent starting stock for soups and sauces and can be frozen.
