- 1 pint orange juice
- 4 ounces whole butter
- 1 pint heavy cream

Step 1
In a heavy gauge sauce pan, reduce orange juice by 75%. Add heavy cream and reduce again until sauce is nappe (that is, until it will coat a spoon). Remove from heat and whisk in the butter. Keep warm in a pastry bag.
