  • 1/2 cup vegetable oil
  • 3/4 cup sugar
  • 3 eggs
  • 2 1/2 cups flour
  • 2 Tsp. baking powder
  • 4 Tsp. vanilla

Step 1

First beat the oil, sugar and eggs about 3 minutes. Then add the flour, baking powder and vanilla and mix well with a spoon. Refrigerate the dough for 1 hour. Butter a large sheet pan and with a serving spoon, make six mounds about 3 inches apart. Bake for 20 to 25 minutes at 350 degrees. Then cut the mounds with a serrated knife to make the biscotti. Bake the biscotti in a 325 degree oven for 10 minutes. Turn them over and bake for another 10 minutes.
