Ingredients
- 3 lbs potatoes, red, white, sweet, peeled and diced
- mayonnaise
- 1 Tbsp Dijon mustard
- 1/4 c sliced green onion
- bacon - cooked and crumbled

Preparation
Step 1
Boil potatoes until soft.
Mix together mayo and mustard in a bowl. Pour over potatoes, along with green onions. Mix well and either serve immediately or refrigerate until serving.
Sprinkle with bacon just before serving.
