Tylers Ultimate Hamburger

Combine the jack cheese and chopped bacon in a bowl
- 1/2 cup shredded Monterey jack
- 4 slices cooked bacon, chopped
- 1 pound ground chuck
- Kosher salt and freshly ground black pepper
- 4 large hamburger buns, split
- Ketchup, mayonnaise, and mustard, for serving
- Lettuce, sliced tomato, onion, and avocado, for serving
Rachel Ray Blue-rugula Burgers

Heat 1 tablespoon of olive oil and 1 tablespoon butter over medium heat
- 2 tablespoons extra-virgin olive oil, divided
- 2 tablespoons butter
- 1 large onion, sliced
- Salt and freshly ground black pepper
- 1 tablespoon brown sugar
- Splash water
- 1/4 cup spicy brown mustard
- 1 1/2 pounds ground sirloin
- 2 cloves garlic, grated
- 3 tablespoons Worcestershire sauce, eyeball it
- A handful fresh parsley, finely chopped
- 1/2 pound Cambazola blue cheese, thinly sliced
- 4 crusty rolls, split, lightly toasted
- 2 handfuls arugula leaves, coarsely chopped
Rachel Rays Beef and Chicken Fajita Burgers

Heat a grill pan or large skillet over medium high heat
- Beef Fajita Burgers:
- 1 1/3 pounds ground sirloin
- 2 tablespoons Worcestershire sauce, eyeball it
- 1 tablespoons chili powder, a palm full
- 1 1/2 teaspoons ground cumin, half a palm full
- 2 to 3 tablespoons fresh picked thyme leaves, several sprigs
- Several drops hot sauce
- 1 tablespoon grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
- Extra-virgin olive oil, for drizzling
- Chicken Fajita Burgers:
- 1 1/3 pounds ground chicken
- 1 tablespoons ground chipotle (smoky flavor) chili powder, a palm full
- 2 to 3 tablespoons chopped fresh cilantro leaves
- Several drops hot sauce
- 1 tablespoon grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
- Extra-virgin olive oil, for drizzling
- Seared Peppers and Onions:
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 2 red or green bell peppers, seeded and thinly sliced lengthwise
- 1 medium yellow skinned onion, thinly sliced lengthwise, reserve 1/4 of a piece, uncut
- 1 jalapeno or serrano, seeded and chopped
- 2 cups tomatillo, green chili salsa or chipotle-tomato salsa, your choice
- 8 crusty rolls, split

Mexican Lasagna

Preheat the oven to 425 degrees F
- 3 tablespoons extra-virgin olive oil
- 2 pounds ground chicken breast, available in the packaged meats case
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1/2 red onion, chopped
- 1 (15-ounce) can black beans, drained
- 1 cup medium heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes
- 1 cup frozen corn kernels
- Salt
- 8 (8 inch) spinach flour tortillas, available on dairy aisle of market
- 2 1/2 cups shredded Cheddar or shredded pepper jack
- 2 scallions, finely chopped
