- 1 pound ground beef, cooked and drained
- 1 cup onion, chopped
- 4 cups water
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup potatoes, peeled and cubed
- 2 teaspoons salt
- 1 teaspoon soy sauce
- 1/4 teaspoon pepper
- 1 bay leaf
- 1/8 teaspoon basil, dried
- 6 tomatoes, chopped or 1- 128 oz. can chopped tomatoes with liquid
Champagne Cosmopolitan Cocktails

- 1 1/2 cups Cointreau
- 1 1/2 cups cranberry juice cocktail
- 1/2 cup fresh lime juice
- 2 naval oranges, stripped of their zest in long, thick threads
- 1 750ml bottle champagne
Raspberry Chocolate Ganache Tart

- Tart:
- 1 Oreo cookie crust (recipe below) or 1-Pastry shell (recipe below)
- 1/3 cup seedless raspberry preserves
- 1 tablespoon Grand Marnier or Amaretto
- Chocolate Ganache (recipe below)
- 2 cups heavy cream
- 1/4 cup confectioner's sugar
- 1 teaspoon vanilla
- Oreo Cookie Crust: (makes one 9-inch crust)
- 25 Oreo cookies, crushed (this will give you about 2 1/2 cups)
- 1/2 cup (1 stick) unsalted butter, melted
- Pastry Shell: (makes two 9-inch crust)
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 12 tablespoon (1 1/2 sticks) cold unsalted butter, cut into small pieces
- 1/3 cup cold vegetable shortening
- 6-8 tablespoons (about 1/3 cup) ice water
- Chocolate Ganache:
- 1 1/2 cups heavy cream
- 10 ounces semi-sweet chocolate broken into pieces
- 1 tablespoon Grand Marnier or Amaretto

Sugar Crusted Vanilla French Toast

Simple, easy and elegant breakfast
- For the Custard:
- 1 small baguette or crusty loaf of bread, cut into 1-inch slices (about 1 pound)
- 3 large eggs
- 1/2 cup milk
- 1/3 cup heavy cream
- 2 teaspoons pure vanilla extract
- 1/4 teaspoon ground cinnamon
- Pinch of Sea Salt
- For the Sugar Coating:
- 1/2 cup (1 stick or 8 tablespoons) unsalted butter
- 3/4 cup packed dark brown sugar
- 2 tablespoons light corn syrup
- 1 teaspoon pure vanilla extract

I do love a good yeast-raised doughnut, and in fact in most ways, they're easier to make than their cake-style coun...
- For the sponge:
- 4.2 ounces all-purpose flour
- 0.5 teaspoons instant yeast
- 3.5 ounces lukewarm water
- 1 large egg
- For the doughnuts:
- 5.8 ounces all-purpose flour
- 2.5 teaspoons instant yeast
- 0.6 ounces dry milk
- 1/4 teaspoon salt
- 0.5 ounces sugar
- 1 large egg, cold
- 2 teaspoons vanilla extract
- 2 ounces butter at room temperature
- Canola oil for frying
- Extra fine sugar for rolling (for jelly doughnuts)
- Raspberry or other fruit jam for filling (for jelly doughnuts)
Spinach Cannelloni Pie

- Tomato Sauce:
- 1- 10 oz. package frozen, chopped spinach, defrosted and squeezed dry
- 1/4 cup chopped flat leaf Italian Parsley
- 3 large eggs
- 2 cups ricotta cheese
- 3/4 cup freshly grated parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 recipe Tomato Sauce
- 1 recipe Parmesan Garlic Sauce
- 9 No-bake lasagna noodles (flat)
- 2 tablespoons olive oil
- 1 cup chopped onion
- 6 cups peeled, seeded, and chopped tomatoes or 3- 15 1/2 oz. cans chopped tomatoes
- 1 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon sugar
- 2 tablespoons chopped fresh basil
- 1/4 cup chopped fresh Italian flat-leaf parsley
- Parmesan Garlic Sauce:
- 6 tablespoons butter
- 1 clove garlic, minced
- 6 tablespoons all-purpose flour
- 3 cups milk
- 1/2 teaspoon salt
- 6 shakes Tabasco sauce
- 1/2 cup freshly grated parmesan cheese
Pizzettes (Keith's famous pizza)

Keith Dunn made these amazing pizzas when I went to visit Vera & Keith this past April (2016)
- For the Dough:
- (I usually double this recipe to make two 12" thin pizza crusts or four 6" individual pizzas)
- 1 t yeast
- 1 1/2 cups all-purpose flour
- 1 t sugar
- 1/2 cup water
- 2 T olive oil
- 1 pinch ground black pepper
- 1 t salt
- For the Pizzettes:
- 3 T olive oil
- 1 garlic clove, minced
- mozzarella cheese, shredded or if fresh, sliced
- plum tomatoes, sliced thin
- sweet italian sausage, cooked and crumbled
- Italian Seasoning or pizza seasoning, red pepper, if desired
- Pizza sauce or Spaghetti sauce, served on the side for dipping or spread onto the crust
- Any other vegetables and pizza combinations of your choice!
Blueberry Crumb Cake

Very good homemade blueberry type coffee cake
- For the streusel:
- 1/4 cup granulated sugar
- 1/3 cup light brown sugar, lightly packed
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/4 pound (1 stick) unsalted butter, melted
- 1 1/3 cups all-purpose flour
- For the cake:
- 6 tablespoons unsalted butter, at room temperature (3/4 stick)
- 3/4 cup granulated sugar
- 2 extra large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon grated lemon zest
- 2/3 cup sour cream
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup or more fresh blueberries
- Confectioners' sugar for sprinkling
Tequila Lime Chicken

Simple, quick and delicious chicken with a bit of a kick
- 1/2 cup gold tequila (Cuervo Gold)
- 1 cup freshly squeezed lime juice (5-6 limes)
- 1/2 cup freshly squeezed orange juice (2 oranges)
- 1 tablespoon chili powder
- 1 tablespoon minced fresh jalapeno pepper (1 pepper seeded)
- 1 tablespoon minced fresh garlic (3 cloves)
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon cilantro, minced (optional)
- 6 boneless chicken breasts
