  • 1 cup basil, 20 leaves
  • 1/2 cup tarragon leaves from 10 to 12 stems
  • Handful flat-leaf parsley
  • 1 lemon, zested
  • 1 clove garlic
  • 1/2 cup grated Parmigiano-Reggiano, plus more to pass at table
  • Coarsely ground black pepper
  • 1/3 cup extra-virgin olive oil, eyeball it

  • 3/4 cup low-fat buttermilk (preferably)
  • 3 large eggs , at room temperature
  • 1 large egg yolk , at room temperature
  • 18 tablespoons unsalted butter (2 1/4 sticks), at room temperature
  • 2 cups sugar (14 ounces)
  • Glaze
  • 2 - 3 tablespoons fresh lemon juice (see note above)
  • 1 tablespoon buttermilk
  • 2 cups confectioners' sugar (8 ounces)

Roughly chop 6 raw scapes

  • Roughly chop 6 raw scapes. Place in a blender. Add about 1/4 cup olive oil and 1/4 cup grated parmesan cheese. Blend for about 3 minutes or even more until the mix is quite smooth. Add more oil, cheese, and salt (try smoked) to taste.
