- 1 pound penne rigate (with lines) pasta
- Salt
- 1/2 pound asparagus, trimmed of tough ends
- 1 small zucchini
- 1/4 pound, haricots verts (thin green beans) trimmed of stem ends
- 1/4 cup pine nuts
- 1 cup basil, 20 leaves
- 1/2 cup tarragon leaves from 10 to 12 stems
- Handful flat-leaf parsley
- 1 lemon, zested
- 1 clove garlic
- 1/2 cup grated Parmigiano-Reggiano, plus more to pass at table
- Coarsely ground black pepper
- 1/3 cup extra-virgin olive oil, eyeball it

- 3 lemons , zest grated and saved, then juiced for 3 tablespoons juice (see note above)
- 3 cups unbleached all-purpose flour (15 ounces)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon table salt
- 1 teaspoon vanilla extract
- 3/4 cup low-fat buttermilk (preferably)
- 3 large eggs , at room temperature
- 1 large egg yolk , at room temperature
- 18 tablespoons unsalted butter (2 1/4 sticks), at room temperature
- 2 cups sugar (14 ounces)
- Glaze
- 2 - 3 tablespoons fresh lemon juice (see note above)
- 1 tablespoon buttermilk
- 2 cups confectioners' sugar (8 ounces)
Skillet Roasted Chicken with Cardamom

Preheat oven to 425 degrees
- 1 roasting chicken
- 6 cardamom pods, seeds removed or 1 Tbls. ground cardamom
- a heavy grinding of black pepper (equal to about 1 tsp.)

Garlic Scapes Pesto

Roughly chop 6 raw scapes
- Roughly chop 6 raw scapes. Place in a blender. Add about 1/4 cup olive oil and 1/4 cup grated parmesan cheese. Blend for about 3 minutes or even more until the mix is quite smooth. Add more oil, cheese, and salt (try smoked) to taste.
- Serve over pasta or top on crostini for a nice starter.
