Grilled Tuna Rolls

- Good olive oil
- 1 pound very fresh tuna steak, 1-inch thick
- Kosher salt and freshly ground black pepper
- 1 lime, zest grated
- 3 tablespoons freshly squeezed lime juice (2 limes)
- 1/2 teaspoon wasabi powder
- 1 teaspoon soy sauce
- 5 dashes hot sauce (recommended: Tabasco)
- 1 firm, ripe Hass avocado, medium-diced
- 1/4 red onion, chopped
- 1 tablespoon minced scallion, white and green parts
- 1 tablespoon toasted sesame seeds
- 9 hot dog rolls, grilled or toasted
- 1 bunch baby arugula, washed and spun dry

Limoncello Tiramisu

- The Zabaglione:
- 5 Egg yolks
- 1/4 cup sugar
- 1/2 cup Limoncello
- Syrup:
- 1 Cup Limoncello
- 3/4 cup fresh squeezed lemon juice (Myer Lemons are the best)
- 1 cup water
- 1/2 cup sugar
- Mascarpone Cream and tiramusu:
- 5 egg whites
- 1/4 cup sugar
- 2 cups Mascarpone, at room temp.
- 74 Lady Fingers.
Chocolate Almond Milkshakes

- 1 pint chocolate ice cream, softened (recommended: Haagen Dazs Dark Chocolate)
- 1 cup whole milk
- 1 cup low-fat vanilla yogurt
- 1/2 cup smooth, unsalted almond or peanut butter
- 1 teaspoon pure vanilla extract
- 1 (2-ounce) semi-sweet chocolate bar

- 1 cup white flour
- 1/2 tsp. baking powder
- salt and freshly ground black pepper , to taste
- 3 egg yolks
- 1 cup water, pr enough as needed to create correct consistency for dipping fillets

- 4 to 6 large potatoes, peeled and cut in baronnet
- 6 (6 to 8 ounce) tilapia fillets, sliced in 1/2 inch strips
- malt vinegar, as an accompanying condiment

- 3/4 cup white basmati rice
- 1/2 teaspoon kosher salt
- 5 cups half-and-half, divided
- 1/2 cup sugar
- 1 extra-large egg, lightly beaten
- 1 teaspoon pure vanilla extract
- 1/4 cup pure maple syrup, plus extra for serving (optional)

- 12 ounces good French Brie, cut into 4 wedges
- 6 tablespoons honey
- 3 tablespoons roasted and salted pistachios

Greek Lasagna
- For Tomato Sauce:
- 3 Tablespoons good olive oil
- 1 1/2 cups chopped yellow onion (1 Large)
- 1 pound lean ground beef
- 1 pound lean ground lamb
- 1/2 cup dry red wine
- 1 tablespoon minced garlic (3 large cloves)
- 1 Tablespoon ground cinnamon
- 1 teaspoon dried oregano
- 1 teaspoon fresh thyme leaves
- pinch cayenne pepper
- 1 28 ounce can crushed tomatoes in puree
- Kosher salt and freshly ground pepper.
- For the Bechamel:
- 1 1/2 cups whole milk
- 1 cup heavy cream
- 4 tablespoons (1/2 stick) butter
- 1/4 cup all purpose flour
- 1/4 teaspoon grated nutmeg

- 1/3 cup (1/2-ounce) chopped fresh chives
- 26 saltine crackers, crushed, divided
- 1/2 cup frozen corn, thawed
