- 1 crusty sourdough peasant loaf (1/2" slices)
- 1 pound sliced, sharp, yellow cheddar cheese
- 1 cup fresh basil leaves (plus more to garnish)
- 1 stick unsalted butter (softened)
- 1 medium onion (grated)
- 3 garlic cloves (grated)
- 4 .5 ounces tomato paste
- 1 tablespoon paprika
- 2 teaspoon fresh thyme leaves
- 1 teaspoon red pepper flakes
- 1 cup milk
- 1/2 cup heavy cream
- 6 eggs
- 1/4 cup Monterey Jack cheese (grated)
- 1/4 cup sharp, yellow cheddar cheese (grated)
- extra-virgin olive oil
- Kosher salt and freshly ground black
