  • 1 tsp fresh ginger (grated)
  • 3 tbsps oyster sauce
  • 2 tsps chinese rice wine (or dry sherry)
  • 2 tsps chinese black vinegar (or young balsamic vinegar)

  • 2 tablespoons butter
  • 1/2 yellow onion, chopped
  • 1 teaspoon garlic, minced
  • 8 ounces fresh spinach, washed, drained, and chopped
  • 2 tablespoons all purpose flour
  • 3/4 cup milk
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup ricotta cheese
  • 1 teaspoon sugar
  • coarse salt and freshly ground pepper, to taste
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup shredded Parmesan cheese
