1. Mix all the ingredients of Marinade in a big bowl, stir well
- 1 tablespoon scallions, chopped finely

- 1 tablespoon rice wine
- 1/4 teaspoon baking soda

Black and Wild Rice Salad with Roasted Squash

- 1 1/2 cups black rice
- 1/2 cup wild rice
- Kosher salt
- 1/2 medium butternut squash, peeled, seeds removed, cut into pieces

- 4 1/2 pounds short ribs, cut into 4-inch pieces

- 6 tablespoons butter
- 3 thinly sliced green onion
- 3 -6 cups heavy whipping cream
- 6 tablespoons chopped sun-dried tomatoes
- 3/4 teaspoon salt
- 3/4 teaspoon dried basil
- 3/8 teaspoon ground black pepper

Beer-Cheese Hushpuppies

In a medium bowl mix cornmeal, flour, baking powder, sugar and salt
- 1 cup of yellow cornmeal
- 1/2 cup of all-purpose flour
- 1 1/2 teaspoons of baking powder
- 1 teaspoon of sugar
- 1/2 teaspoon of salt
- 2 ounces of pepper jack cheese or cheddar cheese, shredded (1/2 cup)
- 1/3 cup of finely chopped onion
- 1/3 cup of finely chopped red sweet pepper
- 1 egg, lightly beaten
- 2/3 cup of light lager
- Vegetable oil or shortening for deep-fat frying
- Snipped fresh flat-leaf Italian parsley (optional)
- Green or red jalapeno jelly
Beer-Braised Baby Back Ribs

Heat oil in a large soup pot, add the ham hock and sear on all sides for 4 minutes
- 1 tablespoon olive oil
- 1 large ham hock
