Purée blanched almonds and garlic with water and 1/4 tsp salt in a blender until smooth
- 3/4 * 3/4 cup whole blanched almonds (4 oz)

- 1/2 * 1/2 cup grated Parmigiano-Reggiano plus additional for serving

Roasted Garlic Mashed Potatoes

- 2 lbs potatoes
- 1 head garlic
- 1 tablespoon olive oil
- 1/4 cup sour cream
