Sunny's Southwestern Chicken Pot Pie

- 1 teaspoon sazon seasoning blend
- 1 1/4 cups all-purpose flour, plus more for rolling
- 1 stick butter, cut into pieces and frozen
- Pinch salt
- 1 pound chicken thighs and legs
- 8 sprigs fresh thyme
- 6 cloves garlic, 4 smashed the other 2 thinly sliced

- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 serrano pepper, seeded and chopped

Lemony White Bean and Arugula Salad

- 1 (15-ounce) can cannellini or great Northern beans, rinsed and drained
- 1/2 small red onion, thinly sliced
- 3 tablespoons capers, rinsed and drained

- 1/4 cup yellow curry paste, such as Mae Ploy
- 1 medium carrot, peeled and sliced into 1/4-inch-thick rounds
- 1 small red bell pepper, cored, seeded and chopped into 1/4-inch pieces
- 1 small onion, chopped
- One 15-ounce can baby corn, drained, rinsed and cut into 1-inch pieces
- 1 Thai chile or serrano chile, stemmed and thinly sliced
- 5 sprigs Thai basil, with stems
- 3 Thai lime leaves(lime zest substitute)
- 1 1/2 tablespoons fish sauce
- 1 pound large shrimp, peeled and deveined
- 4 ounces snap peas, halved
- 8 ounces fresh thin rice noodles(angel hair pasta substitute)
- 4 cups canola oil or safflower oil

Potato-Bacon Torte

Preheat the oven to 375 degrees F
- 4 strips bacon
- 3 sprigs fresh thyme
- 2/3 cup heavy cream
- 2 Pie Crusts, recipe follows
- 3 medium baking potatoes, peeled
- Salt and freshly ground black pepper

- 2 medium red bell peppers, halved lengthwise, cored and seeded
- 1 tablespoon extra-virgin olive oil
- 1/4 cup vegetable oil
- Two 8-ounce Japanese eggplants, trimmed and cut into 1/2-inch pieces
- 1/4 teaspoon kosher salt
- One 26-ounce jar tomato-basil sauce, such as Giada De Laurentiis for Target Tomato-Basil Sauce
- 20 pitted medium black olives, chopped
- 20 pitted medium green olives, chopped
- 2 tablespoons capers, rinsed and drained
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons plain breadcrumbs

Bananas Foster French Toast

- 4 eggs
- 1/4 tsp. ground cinnamon
- 1/2 cup milk
- 6 Tbs. firmly packed dark brown sugar
- Kosher salt, to taste
- 4 day-old slices brioche or other egg bread, each 1 inch thick
- 6 Tbs. (3/4 stick) unsalted butter
- 4 bananas, cut on the bias into 1/2-inch slices
- 1/4 cup dark rum
- 1/2 tsp. vanilla bean paste
- 3 Tbs. water
Creamy Cheddar Grits

- 2 teaspoons kosher salt
- 1 cup fine quick-cooking grits (not instant)
- 1 1/4 cups half-and-half
- 2 tablespoons unsalted butter
- 1 1/2 cups grated aged sharp Cheddar cheese (4 ounces)
- 1/2 cup chopped scallions, white and green parts (4 scallions)
- 1/2 teaspoon freshly ground black pepper
- Grated Cheddar and chopped scallions, for garnish

- 1/3 cup Melted Butter (salted)
- 3 whole Eggs Beaten
- 1 cup (heaping) Chopped Pecans

- 3 Thai chiles, such as prik kee noo, or 3 serrano chiles, stemmed and thinly sliced*
- 1 pound flank steak, very thinly sliced
- 3 shallots, thinly sliced
- 1 red bell pepper, stemmed, cored, seeded and cut into 1/8-inch thick slices
- 1/4 cup fish sauce*
- 2 tablespoons sweet soy sauce*
- 2 tablespoons black soy sauce*
- 1 tablespoon chili paste in soy bean oil*
- 1 1/2 cups chopped fresh Thai basil leaves*
- 1 cup whole fresh mint leaves
- *Can be found at specialty Asian markets
