Warren's Chicken Bites

Directions Preheat the oven to 400 degrees F
- 8 chicken tenders or breast cutlets, flattened and cut in half
- Two 3-ounce packages cream cheese, softened
- 1 jalapeno pepper, seeded and finely chopped
- 16 slices bacon
Asparagus and Parmesan Cheese

Steam asparagus till tender drizzle with oil and sprinkle with parmesan cheese
- 2 bunches asparagus snap off tough ends
- 1/3 cup olive oil
- 6 ounces parmesan cheese

Roasted Potato Leek Soup

Preheat the oven to 400 degrees F
- 2 pounds Yukon gold potatoes, peeled and cut into 3/4-inch chunks
- 4 cups chopped leeks, white and light green parts, cleaned of all sand (4 leeks)
- 1/4 cup good olive oil
- Kosher salt and freshly ground black pepper
- 3 cups baby arugula, lightly packed
- 1/2 cup dry white wine, plus extra for serving
- 6 to 7 cups chicken stock, preferably homemade
- 3/4 cup heavy cream
- 8 ounces creme fraiche
- 1/4 cup freshly grated Parmesan, plus extra for garnish
- Crispy Shallots, recipe follows, optional
- 1 1/2 cups olive oil or vegetable oil
- 3 tablespoons unsalted butter
- 5 to 6 shallots, peeled and sliced into thin rings
Thyme Popovers

Preheat the oven to 425 degrees F
- Softened butter for greasing pans, plus 1 1/2 tablespoons unsalted butter, melted
- 1 1/2 cups all-purpose flour, sifted
- 3/4 teaspoon kosher salt
- 1 teaspoon chopped fresh thyme leaves
- 3 extra-large eggs, at room temperature
- 1 1/2 cups whole milk, at room temperature

- 1/4 cup granulated sugar

Company Pot Roast

Preheat the oven to 325 degrees F
- 1 (4 to 5-pound) prime boneless beef chuck roast, tied
- Kosher salt and freshly ground black pepper
- All-purpose flour
- Good olive oil
- 2 cups chopped carrots (4 carrots)
- 2 cups chopped yellow onions (2 onions)
- 2 cups chopped celery (4 stalks)
- 2 cups chopped leeks, white and light green parts (2 to 4 leeks)
- 5 large garlic cloves, peeled and crushed
- 2 cups good red wine, such as Burgundy
- 2 tablespoons Cognac or brandy
- 1 (28-ounce) can whole plum tomatoes in puree
- 1 cup chicken stock, preferably homemade
- 1 chicken bouillon cube
- 3 branches fresh thyme
- 2 branches fresh rosemary

Grilled Clams with Charred Zucchini and Garlic
