- 1 small tomato, chopped
- 1 serrano chile, seeded, chopped

- 1 egg white
- 1 cup dark beer
- 1 cup all-purpose flour
- 3/4 teaspoon kosher salt, plus extra for sprinkling

Grilled Salmon Sandwiches

- 2 pounds fresh salmon fillets
- Good olive oil
- Kosher salt
- Freshly ground pepper
- 1 cup good mayonnaise
- 1/4 cup sour cream
- 3/4 teaspoon white wine vinegar
- 12 fresh basil leaves
- 3/4 cup chopped fresh dill
- 1 1/2 tablespoons chopped scallions, (white and green parts)
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 3 teaspoons capers, drained
- 6 fresh white or brioche rolls (4-inch round)
- 1/4 pound mesclun mix or fresh basil leaves
Drip Beef Sandwiches

Sprinkle the chuck roast with salt and pepper
- One 4-pound chuck roast
- Salt and black pepper
- 3 tablespoons butter
- 2 tablespoons canola oil
- 2 cups beef broth
- 2 tablespoons minced fresh rosemary
- 1 jar pepperoncini, juice and all
- 2 yellow onions, sliced
- 10 to 12 toasted, buttered deli rolls
Fried Oyster Spoons

- 1 cup mayonnaise
- 3 shallots, chopped
- 1 tablespoon tarragon vinegar
- 2 tablespoons fresh tarragon, chopped
- 2 tablespoons capers
- 4 cups peanut oil, for frying
- 1 pint (approximately 50) shucked Bluffton or other fresh oysters
- 1 1/2 cups all-purpose coating (recommended: Golden Dip All Purpose Breading Mix)
Tuna and Hummus Sandwiches

Directions Drain the oil from the tuna, reserving the oil
- 14 ounces jarred or canned Italian tuna in olive oil
- 1/4 cup minced celery
- 2 tablespoons minced yellow onion
- 2 tablespoons minced cornichons
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons good mayonnaise
- 1 teaspoon Dijon mustard
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- Sourdough bread, halved and sliced 1/2 inch thick
- Hummus, store-bought or homemade (recipe follows)
- Fresh radishes, sliced
- 2 cups canned chickpeas, drained, liquid reserved (15.5-ounce can)
- 1/3 cup tahini or sesame paste
- 4 teaspoons minced garlic (4 cloves)
- 6 tablespoons freshly squeezed lemon juice (3 lemons)
- 8 dashes hot sauce, such as Tabasco
- 2 teaspoons kosher salt
Glazed Baked Ham

- 1 fully cooked ham, bone-in (18 to 20 pounds)

- 3 cups brown sugar
- 1/2 cup spicy brown mustard

Gulf Shrimp Jambalaya

- 2 pounds medium gulf shrimp, peeled and deveined, shells reserved
- Extra-virgin olive oil
- 1 pound andouille sausage, cut into rounds
- 2 green peppers, seeded and cut into 1/4-inch dice
- 3 ribs celery, cut into 1/4-inch dice
- 1 Spanish onion, cut into 1/4-inch dice
- Kosher salt
- Pinch crushed red pepper
- 3 cloves garlic, smashed and finely chopped
- 1 (28-ounce) can diced tomatoes
- 1 teaspoon cayenne pepper
- 2 cups long-grain rice
- 2 fresh bay leaves
- 1 bundle fresh thyme
- 5 scallions, whites and greens thinly sliced, for garnish
Panna Cotta with Balsamic Strawberries

In a small bowl, sprinkle the gelatin on 1 1/2 tablespoons of cold water
- 1/2 packet (1 teaspoon) unflavored gelatin powder
- 1 1/2 tablespoons cold water
- 1 1/2 cups heavy cream, divided
- 1 cup plain whole-milk yogurt
- 1 teaspoon pure vanilla extract
- 1/2 vanilla bean, split and seeds scraped
- 1/3 cup sugar, plus 1 tablespoon
- 2 pints (4 cups) sliced fresh strawberries
- 2 1/2 tablespoons balsamic vinegar
- 1 tablespoon sugar
- 1/4 teaspoon freshly ground black pepper
- Freshly grated lemon zest, for serving
