Auntie Myra’s NEW Brownies

Do not use electric mixers! Do not preheat the oven! 1
- 2 sticks unsalted sweet butter
- 12 oz. semisweet chocolate
- 5 medium or large eggs
- 1/4 tsp salt
- 1 1/2 cups granulated sugar
- 1/2 cup light brown sugar
- 1 cup flour
- 1 T cocoa
- 1 tsp espresso or instant coffee
- 2 tsp vanilla
Strawberry Rhubarb Crisp

- 1 pound rhubarb, trimmed and diced (about 3 cups)
- 1 pound strawberries, halved or quartered if large (about 3 cups)
- 3/4 cup sugar
- 2 tablespoons cornstarch
- 2 teaspoons freshly squeezed lemon juice
- 2/3 cup all-purpose flour (or sub any flour) *I used oat
- 2/3 cup rolled oats
- 3/4 cup packed light brown sugar
- 6 tablespoons (3/4 stick) cold unsalted butter, cut into small pieces *I used Earth Balance
- 1 teaspoon ground cinnamon
- 1/2 teaspoon freshly grated nutmeg
- 1/4 teaspoon salt
Mediterranean Baked Sweet Potatoes

Minimalist Baker
- SAUCE:
- 2-3 large sweet potatoes - cut in half
- 1 15-ounce can chickpeas, rinsed and drained
- 1/2 Tbsp olive oil
- 1/2 tsp each cumin, cinnamon, smoked paprika
- Pinch of sea salt
- 1/4 tahini
- juice of at least 1 lemon
- 3/4 - 1 tsp dried dill (or sub 2-3 tsp fresh)
- 3 cloves garlic, minced
- Water to thin
- Sea salt to taste
- TOPPING:
- 1/2 cup cherry tomatoes, diced
- 1/2 cup chopped parsley, minced
- juice of 1-2 lemons
Lemon Blueberry Cheesecake Bars

Preheat oven to 325 degrees F
- For the base:
- Butter, for greasing
- 2 tablespoons sugar
- 1/8 teaspoon ground cinnamon
- 9 graham crackers
- 1/2 stick unsalted butter, melted
- For the filling:
- 16 ounces cream cheese, room temperature
- 2 eggs
- 2 lemons, zested and juiced
- About 1/2 cup sugar, eyeball it
- 1 1/2 cups fresh blueberries
- Powdered sugar, for dusting
Dark Chocolate Dipped Macaroons

Combine shredded coconut, almond flour, sugar and salt till well blended

- 1 1/2 tbsp almond flour
- 1/2 cup sugar

Kabocha Squash Soup

Preheat oven to 425F. Line a baking sheet with foil or parchment paper
- 2 medium Kabocha squash
- 1 tablespoon coconut oil
- 1 shallot diced
- 2 cloves garlic minced
- 1 ” piece if ginger, minced
- 6 cups vegetable stock plus more to thin soup if necessary
- 1/2 cup lite coconut milk (plus more for garnish)
- Salt and pepper to taste

Quinoa and Black Beans

1. Heat the oil in a medium saucepan over medium heat
- 1 teaspoon vegetable oil
- 1 onion, chopped
- 3 cloves garlic, peeled and chopped
- 3/4 cup uncooked quinoa
- 1 1/2 cups vegetable broth
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- salt and pepper to taste
- 1 cup frozen corn kernels
- 2 (15 ounce) cans black beans, rinsed and drained

- 1.5 cups water
- 1 cup vegetable broth
- 1/2 onion, diced
- 3 cloves garlic, minced
- 1/2 cup nutritional yeast
- 1 can chickpeas, drained and rinsed
- 5-6 cups fresh spinach
- 2 tbsp. olive oil, divided
- salt, pepper, basil, garlic, and oregano to taste
- paprika, for garnishing (chili powder if you want some heat)
