- For sugar dusting:
- 1 cup sorghum flour
- 1 cup potato starch (not potato flour)
- 1/2 cup hazelnut flour
- 1 cup light brown sugar
- 1/4 cup cane sugar
- 1 1/2 teaspoons baking soda
- 1 teaspoon xanthan gum
- 1 teaspoon sea salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 3 organic free-range eggs, beaten
- 1/2 cup organic expeller-pressed canola oil
- 1 14-oz can pumpkin
- 2 teaspoons bourbon vanilla extract
- Granulated cane sugar

Easy Chicken Posole

Heat 2 tablespoons canola oil in a deep skillet over medium-high heat
- 2 1/2 pounds skinless, boneless chicken breast halves
- 4 tablespoons vegetable oil, divided
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 1/2 quarts chicken broth
- 3 cups water
- 1 teaspoon crumbled dried oregano
- 2 teaspoons salt
- 4 tablespoons chili powder, or to taste
- 3 cups white hominy, rinsed and drained

- 1-1/2 c unsalted butter
- 1-1/2 c sugar
- 1/2 C molasses
- 2 eggs

Tequila Lime Chicken

Slice open the limes and squeeze the juice into a food processor or blender
- 4 limes
- 1 cup tequila
- 1/4 cup olive oil
- 2 teaspoons kosher salt
- 5 cloves garlic
- 1 jalapeno, sliced
- 1/2 bunch chopped fresh cilantro
- 12 boneless, skinless chicken breasts
- 2 cups grated Monterey Jack

Simple, Perfect Chili - PW

Place the ground beef in a large pot and throw in the garlic
- 2 pounds ground beef
- 2 cloves garlic, chopped
- One 8-ounce can tomato sauce
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground oregano
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/4 cup masa harina
- One 15-ounce can kidney beans, drained and rinsed
- One 15-ounce can pinto beans, drained and rinsed
- Shredded Cheddar, for serving
- Chopped onions, for serving
- Tortilla chips, for serving

Steam the potatoes in their skins for 30 minutes
- 3 pounds potatoes, scrubbed
- 2 sticks butter
- 1 1/4 cups hot milk
- Freshly ground black pepper
- 1 head cabbage, cored and finely shredded
- 1 (1-pound) piece ham or bacon, cooked the day before
- 4 scallions, finely chopped
- Chopped parsley leaves, for garnish

- 2 pounds dried pinto beans
- 6 cloves garlic, minced
- 2 green bell peppers, seeded and diced
- 2 orange bell peppers, seeded and diced

- 1 ham hock (or 6 slices thick-cut bacon, cut into pieces)

- 2 pounds ground beef
- 2/3 cup chopped fresh basil
- 2/3 cup finely grated Parmesan
- 2/3 cup jarred tomato-basil sauce, such as Giada De Laurentiis for Target
- 1/3 cup panko breadcrumbs
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 3 large cloves garlic, minced
- 2 large eggs, at room temperature
- 1 small onion, finely chopped
- 1/4 cup extra-virgin olive oil
- 1 medium eggplant, trimmed and cut into six to eight 1/2-inch-thick slices
- 1/4 teaspoon kosher salt
- 1/4 teaspoon finely ground black pepper
- 1/3 to 3/4 cup of jarred tomato-basil sauce, such as Giada De Laurentiis for Target, plus extra for serving
