Directions In a large pot over medium-high heat, add the olive oil and bacon
- 3 tablespoons olive oil
- 4 slices center-cut bacon
- 2 pounds lamb stew meat
- 4 cups mushrooms, quartered
- 6 large carrots, roughly chopped
- 5 cloves garlic, smashed
- 2 Vidalia onions, roughly chopped
- 1/4 cup all-purpose flour
- 4 cups beef stock
- 1/2 cup sherry
- 3 bay leaves
- Salt and freshly ground black pepper
- 1 cup heavy cream
- 3 tablespoons chopped fresh parsley
- 3 tablespoons fresh tarragon leaves
- 1 bag petit frozen peas
- Buttered noodles, for serving

- 1 pound flank steak, trimmed of fat and sliced very thin against the grain

- Salt as needed (use sparingly)
