Directions Heat a pot of water to a boil for the pasta
- Kosher salt
- 1 pound penne rigate (pasta with lines)
- 2 tablespoons unsalted butter
- 2 tablespoons extra-virgin olive oil, 2 turns of the pan
- 8 ounces andouille sausage, diced
- 4 cloves garlic, chopped
- 2 ribs celery, from the heart with greens, chopped
- 1 onion, chopped
- 1 red bell pepper, seeded and chopped
- 1 poblano pepper, seeded and chopped or thinly sliced (1 large jalapeno may be substituted)
- Ground black pepper
- 2 tablespoons all-purpose flour
- 1 cup beer (1/2 bottle)
- 1 cup chicken stock
- 2 tablespoons hot sauce (eyeball it), such as Frank's Red Hot or Tabasco
- 2 tablespoons fresh thyme leaves, chopped
- One 14-ounce can crushed tomatoes
- 8 ounces chicken breast, diced into small pieces
- 8 ounces medium shrimp, cleaned and tails removed
- 1/2 cup heavy cream, eyeball it
- 2 scallions, sliced
Honey Mustard Glazed Ham

Directions Adjust the oven racks to accommodate a large roasting pan and preheat the oven to 350 degrees F
- One 18- to 20-pound smoked ham, water added, ham hock removed
- 2 cups light brown sugar
- 1 cup clover honey (one 8-ounce jar)
- 1 cup country Dijon mustard (see Cook's Notes)

- 3 cups chopped yellow onions (2 large onions)
- 2 tablespoons good olive oil
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
- 1/3 cup Worcestershire sauce
- 3/4 cup chicken stock
- 1 1/2 teaspoons tomato paste
- 5 pounds ground turkey breast
- 1 1/2 cups plain dry bread crumbs
- 3 extra-large eggs, beaten
- 3/4 cup ketchup

- 13 ounces semisweet chocolate chips
- 1/3 cup coffee liqueur
- 1 teaspoon vanilla extract
- 1 pound silken tofu, drained
- 1 tablespoon honey
- 1 (9-inch) prepared chocolate wafer crust, recipe follows
- 6 1/2 ounces chocolate wafer cookies
- 1 tablespoon sugar

- 4 pounds Granny Smith apples, peeled, quartered, and cored
- 1 lemon, zested
- 2 tablespoons freshly squeezed lemon juice
- 1/2 cup sugar, plus 1 teaspoon to sprinkle on top
- 1/4 cup all-purpose flour
- 1 teaspoon kosher salt
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/8 teaspoon ground allspice
