Slow-Cooker Memphis-Style Wet Ribs

Uses liquid smoke; 2 racks = 4-6 servings
- Ribs
- 2 tablespoons paprika
- 1 tablespoon packed brown sugar
- 1 tablespoon kosher salt
- 2 teaspoons pepper
- 2 teaspoons onion powder
- 2 teaspoons granulated garlic
- 2 (2 1/2- to 3-pound) racks St. Louis-style spareribs, trimmed and each rack cut in half
- Barbecue Sauce
- 3/4 cup ketchup
- 6 tablespoons apple juice
- 2 tablespoons molasses
- 2 tablespoons cider vinegar
- 2 tablespoons Worcestershire sauce
- 1 tablespoon yellow mustard
- 1 teaspoon pepper
- 1/4 teaspoon liquid smoke

- 2 cups all purpose flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice

- 1 cup (2 sticks) unsalted margarine, room temperature

- 1/2 c. crème fraiche or sour cream
- 1 TB fresh lemon juice
- 1/4 tsp finely grated lemon peel
- 2 TB butter, divided
- 1 TB extra virgin olive oil
- 6 c diced green cabbage (1/2 " dice; about 1/2 med. head)
- 3 c chopped leeks (white and pale green parts; 3 -4 large leeks)
- 3 large garlic cloves, pressed
- 3 c, 1/2" cubed peeled Yukon Golds (about 1-1/2 pounds)
- 1 2x2" piece parmesan cheese rind (opt)
- 6 c. low salt chicken broth
- 1 TB chopped fresh chives for garnish
Shrimp Salad with Green Curry Dressing

In a large bowl, whisk the lime juice with the oil and green curry paste
- 1/4 cup fresh lime juice
- 1/4 cup canola oil
- 2 tablespoons green curry paste
- 1 pound cooked large shrimp
- 8 ounces torn mixed lettuces (about 10 cups)
- 1 cup cilantro leaves
- 1 cup mint leaves
- 1 cup thinly sliced carrot
- 1/2 cup thinly sliced red onion
- Salt
- Chopped roasted peanuts, for garnish
Lemon-and Prosciutto-Stuffed Pork Loin Roast with Broccolini

- 1 4-pound boneless pork loin roast, trimmed
- 12 thin prosciutto slices (about 6 ounces)
- 1 large lemon, very thinly sliced
- 1 /2 cup panko (Japanese breadcrumbs)
- 1 /4 cup chopped fresh chives
- 1 1/2 teaspoons coarse kosher salt, divided
- 1 teaspoon freshly ground black pepper, divided
- 1 1/2 pounds broccolini, trimmed
