Easy Crispy Garlic Coriander Rice

- 1 cup Rice, washed & drained

- 500 g - 600 g Chicken or any part of chicken you like
- 1 Tbl Coriander seeds
- 1 tsp Cumin seeds
- 4 pcs Cloves
- 1 bulb Onion - small size, finely chopped
- 1/2 tsp Palm Sugar/ White Sugar
- 1 tsp Salt
- 1/4 tsp Tumeric powder
- 1/4 tsp Nutmeg powder (freshly grounded)
- 1 tsp Black Peppercorns (freshly grounded)
- 125 ml Chicken Stock/Water
- 1.50 cm Fresh Ginger - peeled and sliced
- 2.50 cm Cinnamon stick
- Extra Salt and Pepper to taste
- Garnish: Onion Crisps, Spring onions or Coriander leaves.
Shiitake No Nimono (Shiitake Simmered in Soya Sauce)

1. Soak shiitake mushrooms in hot water for 30 minutes
- 6-8 Large Dried Shiitake Mushrooms
- 375 ml Dashi II or Konbu Dashi II (or Instant Dashi Stock)
- 2 Tbl Mirin
- 2 Tbl Sake
- 2 Tbl Japanese Soya Sauce
- 1 Tbl Dark Brown Sugar
Roasted Yogurt Chicken in Ghee

1. Pre-heat the oven @ 180 ºC
- 500 g chicken/breast meats, drumsticks or your choice (clean & cut into chunks)
- 150 ml Ghee (Clarified Butter)
- 1 nos. Green Lime (extract the juice)
- 2 nos Red Onion/Bombay Onion (sliced thinly into rings)
- 2 cloves Garlic blend/pound together
- 3 cm fresh Ginger until fine paste
- 250 ml ready-made Natural yogurt (plain & no sugar added)
- 2-3 medium size potatoes-cut into wedges
- 1 nos medium size carrot - cut into rounds/wedges
- 300 ml Water or as needed
- 3 nos Cloves
- 2 nos Cardamom
- 3-4 cm Cinnamon bark
- 1 nos Star Anise
- 1 Tsp Tumeric powder
- 1 Tsp Chilli paste
- Chilli powder to taste
- 1 Large Ripe Tomato - cut into quarters
- Onion cripies (fried crispy shallots)
- Salt to taste
- Oven-proof pot/deep casserole dish (like Pyrex/Corningware)
Banana Blossom Salad

A traditional Malaysian herbed salad using the flower bud of Banana Tree
- To be chopped finely:
- 1 Whole Banana Blossom
- 1 cup Fully packed Thai Basil
- 1 cup Fully packed Mint
- 1 cup Fully packed Coriander leaves
- 2-3 nos Limes - for juice only (or more if you like sourness)
- 4 nos Fresh Red Chillies (or 1-2 Tablespoons of Sambal/Chilli paste)
- 15 nos Shallots or Small Red Onions-slice thinly
- 50 g Bean Sprouts - blanched
- 50 g Roasted Pine Nuts/ Peanuts - roughly crushed (I prefer to use Pine Nuts)
- Fish Sauce to taste
- Sugar to taste
Sweet Basil Omelette

It’s a very fragrant dish with lots of your favourite fresh Basil leaves cooked in versatile egg mixture
- 2 cups Sweet Basil or any of your choice - fully packed
- 4 nos Eggs ( I used Large Eggs)
- 1 tbl Fish Sauce (optional)
- 2 tbl Soya Sauce
- White Pepper
- Sesame Oil
- Oil for cooking
Grilled Stuffed Mini Portobellas With Sake

1. Remove the grits and clean the mushrooms
- 6 pcs Mini Portobella Mushrooms
- 100 g Minced Beef - enough to stuff the mushroom caps
- 1/2 pc Carrrot - julienne
- Few Sprigs of Italian Parsley - chopped finely
- 1 nos medium size Big Onion - chopped finely
- 20 - 40 ml Sake (more if you like)
- L & P Worcestershire Sauce to taste
- Salt & Pepper to taste
- 1 clove garlic - minced finely (optional)
- Olive oil for frying
- Good melting cheese of your choice - Enough cheese to cover the mushrooms (I used grated hard Mozzarella... that's what was left in fridge :-D )

- 1 pkt Fresh Gingko Nuts (100 g @)
- 1 pk Fresh Lotus Seeds (100 g @)
- 300 ml Fresh Milk
- 1-2 tsps Preserved Osmanthus Paste (Gui Hua Tang)
- 2 pcs Fresh Foo Chuk (Fresh Soya Milk Skins)
- 1-2 tsps Dried Osmanthus Flowers
- Some Sugar (to boil Gingko Nuts)
Chicken in Creamy Tomato Gravy

Mild chicken curry with 'secret ingredient' that's a delicious accompaniment to rice, couscous or breads and yogurt...
- To be blended until smooth with 2 tbl Coconut Milk:
- 1 tbl Cooking oil
- 1.5 kg Chicken meat - washed and cut to pieces (I used chicken thighs)
- 2 nos Onion - medium size, sliced into rings
- 1/2 tsp Ground Cloves
- 1 tsp Tumeric Powder
- 2 tsp Garam Masala
- 3 tsp Chilli Powder
- 4 cloves Garlic
- 1 tbl Fresh Ginger - finely chopped
- 1 tbl Poppy Seeds
- 2 tsp Fennel Seeds
- 3 pods Cardamom - smashed and reserved the black seeds
- 150 ml Coconut Milk - fresh 1st-pressed thick coconut from 1 coconut
- 1 pc Star Anise
- 1 pc Cinnamon Stick
- 4 nos Large Tomatoes - roughly chopped
- 1-2 nos Limes - quartered
Curry Chicken with Kaffir Lime Leaves

1. Clean the chicken and cut into pieces
- To be pounded finely:
- 600 g - 800 g Whole Chicken or Chicken parts (thighs, drumsticks, etc)
- 8 shallots
- 1 stalk Lemongrass - use only the white portion
- 4 pips Garlic
- 6 dried chillies
- 5 fresh red chillies
- 3 cm fresh Tumeric
- Thumb-sized Galangal
- 10 pcs Kaffir Lime leaves
- 4 pieces Tamarind Slices
- 2-3 Tbl Cooking Oil
- 250 ml Fresh Thick Coconut Milk
- Some water
