Lemony Chicken and Orzo Soup

- 1 tablespoon olive oil
- 1 medium leek, white and pale-green parts only, halved lengthwise, sliced crosswise 1/2" thick
- 1 celery stalk, sliced crosswise 1/2" thick
- 12 ounces skinless, boneless chicken thighs
- 6 cups low-sodium chicken broth
- Kosher salt, freshly ground pepper
- 1/2 cup orzo
- 1/4 cup chopped fresh dill
- Lemon halves (for serving)
Shakshuka

- 3 tablespoons canola oil
- 2 medium yellow onions, chopped
- 1 large green bell pepper, cored, seeded, and chopped
- 1 large jalapeño chile, cored, seeded, and chopped
- 7 garlic cloves, finely chopped
- 1/4 cup tomato paste
- One 28-ounce can whole peeled tomatoes, crushed by hand
- 1 bay leaf
- 2 1/2 tablespoons sugar
- 1 1/2 tablespoons kosher salt
- 1 tablespoon sweet Hungarian paprika
- 1 tablespoon ground cumin
- 1 1/2 teaspoons freshly ground black pepper
- 1 teaspoon ground caraway
- 1/2 bunch Swiss chard, stemmed and chopped, or spinach
- 8 to 12 large eggs
Holiday Spice Simmering Stovetop Potpourri

Place water into a small saucepan
- 2 cinnamon sticks or 1 teaspoon ground cinnamon
- 1 tablespoon whole cloves or 1/2 teaspoon ground cloves
- 1 vanilla bean or 1 teaspoon vanilla extract

Huli Huli Chicken

COOK'S NOTE: This chicken can be made in the oven or on the grill
- Marinade Ingredients:
- 2 cups water
- 1 cup soy sauce
- 6 garlic cloves
- 1 tablespoon grated fresh ginger (I grated my frozen ginger on a microplane.)
- 2-3 lbs boneless skinless chicken thighs (any kind of chicken will work, adjust times and methods accordingly)
- Glaze Ingredients:
- 2 tablespoons grated fresh ginger
- 2 teaspoons garlic chili paste
- 4 cloves garlic, minced
- 2 cups pineapple juice
- 1/4 cup light or dark brown sugar
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 1/4 cup rice vinegar

Apple Cider Cupcakes

Preheat oven to 350F. Line a cupcake tin with liners- set aside
- Cupcakes:
- 1/2 cup unsalted butter, softened
- 2/3 cup light brown sugar
- 2 eggs, room temperature
- 1 1/2 cups all purpose flour
- 2 tsp baking powder
- 3/4 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 3/4 cup fresh, unpasteurized apple cider
- Frosting:
- 1 stick of unsalted butter, softened (12 tablespoons)
- 8 oz of cream cheese, softened
- 4 cups of powdered sugar
- 2 tablespoons apple cider
- 1 teaspoon vanilla extract
- cinnamon and nutmeg for sprinkling

- 1/2 cup butter, softened and divided
- 1 cup firmly packed light brown sugar
- 2 tablespoons rum
- 2 ripe bananas
- 3/4 cup granulated sugar

- 1/2 jalapeño, seeded and diced
- 2 tablespoons chopped fresh cilantro
