Kale Breakfast Casserole

Preheat oven to 375. Heat the oil and cook the onions over low heat for 6-8 minutes
- Lg. red onion, diced
- 2 tsp. olive oil
- 1 red bell pepper, diced
- 1 C. mushrooms, sliced
- 2 C. kale, chopped
- 1 tsp. dried thyme
- 10 eggs
- 1/4 C. skim milk
- 2 C. shredded cheese
- 1/2 tsp. black pepper
Baked Dijon Salmon

Preheat oven to 400 degrees F (200 degrees C)
- 1/4 cup butter, melted
- 3 tablespoons Dijon mustard
- 1 1/2 tablespoons honey
- 1/4 cup dry bread crumbs
- 1/4 cup finely chopped pecans
- 4 teaspoons chopped fresh parsley
- 4 (4 ounce) fillets salmon
- salt and pepper to taste
- 1 lemon, for garnish
