Italian Sloppy Joes

Heat the olive oil in a Dutch oven over medium heat
- 1 tablespoon olive oil
- 1 pound ground sirloin
- 8 ounces ground pork
- 8 ounces ground veal
- 2 cloves garlic, minced
- 1 medium onion, diced
- 1 teaspoon dried Italian seasoning
- 1/4 cup dry white wine
- One 28-ounce can diced tomatoes, with juice
- 1/2 cup whole milk
- Kosher salt and freshly ground black pepper
- 8 slices aged provolone cheese
- 8 hinged hoagie/sub rolls
- Oil-packed hot giardiniera, for serving
- Chianti, for serving
Flamin' Cajun Riblets

1. Sprinkle ribs with Cajun seasoning; rub in with your fingers
- 3 pounds pork loin back ribs
- 1 tablespoon Cajun seasoning
- 1 cup bottled chili sauce
- 1 medium onion, finely chopped
- 1 serrano pepper, seeded and finely chopped (see tip, page 28)
- 2 tablespoons quick-cooking tapioca, crushed
- 1 teaspoon finely shredded lemon peel
- 1 tablespoon lemon juice
- 1 - 2 teaspoons bottled hot pepper sauce
- Snipped fresh parsley (optional)

1. Preheat oven to 450 degrees F
- 2 teaspoons canola oil
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt, divided
- 1/2 pound fresh green beans, trimmed
- 1 1/2 cups panko bread crumbs
- 2 eggs, lightly beaten
- 2 tablespoons toasted sesame oil
Chicken and Rice with Fresh Chorizo

In a large enameled cast-iron casserole, heat 1 tablespoon of the olive oil
- 2 tablespoons extra-virgin olive oil
- 4 links fresh chorizo or hot Italian sausage
- 4 whole chicken legs
- Salt and freshly ground pepper
- 2 garlic cloves, minced
- 1 medium red onion, coarsely chopped
- 1 red bell pepper, coarsely chopped
- 1/2 teaspoon ground turmeric
- 1/4 cup dry white wine
- One 28-ounce can whole tomatoes, drained and chopped
- 6 cups chicken stock
- 1 1/2 cups long-grain rice
- 1 cup frozen peas, thawed
- 3 scallions, coarsely chopped
- 2 tablespoons chopped cilantro
- 1 jalapeño, seeded and minced

- 1/4 cup dry bread crumbs
- 1/4 cup milk
- 1 1/2 pounds mixed ground beef, pork and veal
- 1/2 small onion, minced
- 2 garlic cloves, minced
- 1 tablespoon chopped parsley
- 1 teaspoon minced oregano
- 1 egg
- 1 tablespoon salt
- 1/4 teaspoon freshly ground pepper
- 2 tablespoons extra-virgin olive oil
- 3 1/2 cups marinara sauce
- Cooked spaghetti, for serving

- 1 tbsp. celery seeds
- 5 eggs, hard-boiled, peeled, and roughly chopped
- 2 stalks celery, finely chopped
- 1 small yellow onion, finely chopped
- Kosher salt and freshly ground black pepper, to taste
- 2 cups mayonnaise
- 2 tbsp. Dijon mustard
Ricotta Manicotti with Tomato Sauce

- Coarse salt and ground pepper
- 1 package (8 ounces) manicotti, cooked, drained, and cooled
- 2 containers (15 ounces each) part-skim ricotta cheese
- 2 large eggs, lightly beaten
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1 1/2 cups shredded Parmesan cheese
- 1 ounce dried mushrooms such as shiitake (optional), soaked and drained (see cooks' note), and finely chopped (optional)
