Stir-fried sesame kale and red cabbage

Strip the kale leaves from the stems
- 1 large bunch kale, well rinsed
- 1/2 medium head red cabbage
- 1 1/2 tablespoons olive oil
- 1 medium red onion, quartered and thinly sliced
- 2 teaspoons grated ginger
- 1 tablespoon dark sesame oil
- 1 tablespoon sesame seeds, or more to taste
- Salt and pepper, to taste
Burma-style Chicken Salad

1. In a shallow serving bowl, toss the chicken and drained shallots
- SALAD
- shallot oil & fried shallots (recipe below)
- 4 cooked chicken breasts, meat cut into bite-size pieces
- 4 shallots, thinly sliced, soaked in cold water for 10 minutes, and drained
- Juice of 2 limes, or more to taste
- Salt, to taste
- 1 green cayenne or other chili pepper, cored, seeded, and chopped
- 2 tablespoons chickpea flour (optional)
- 3/4 cup chopped fresh coriander, or mint, or Vietnamese coriander
