Chopped Taco Salad with Homemade Catalina Dressing

FOR THE CATALINA DRESSING: Throw the roughly chopped onion into the bowl of your food processor
- FOR THE HOMEMADE CATALINA DRESSING:
- 1/2 a Yellow Onion, roughly chopped
- 1/2 cup Ketchup
- 1/4 cup Red Wine Vinegar
- 1/4 cup Honey
- 1/4 cup Light Brown Sugar
- 1/2 tablespoon Worcestershire Sauce
- 1 teaspoon Paprika
- 3/4 teaspoon Kosher Salt or more to taste
- 1/4 teaspoon Black Pepper
- 1 cup Extra Light Olive Oil
- FOR THE CHOPPED TACO SALAD:
- 2 lbs Ground Beef
- 1 recipe for Homemade Taco Seasoning
- 1 {heaping} tablespoon Flour
- 1/2 cup Water
- 1 head Iceberg Lettuce, chopped
- 1 to 2 cups shredded Cheddar Cheese, give or take
- 1/2 orange Bell Pepper, chopped
- 1/2 Red Bell Pepper, chopped
- 1/2 Red Onion, chopped
- 3 Green Onions, chopped
- 1 small can {about 2.5 ounces} Sliced Black Olives, Chopped
- 1 Tomato, seeded and Chopped
- 2 cups Tortilla Chips, crushed {give or take}

Quick Cabernet Bolognese Sauce

Heat the olive oil in a large cast iron skillet over medium high heat
- 1 tablespoons olive oil
- 1 medium yellow onion, finely chopped
- 3 medium stalks of celery, finely chopped
- 2 large carrots, finely chopped
- 2 cloves garlic, finely chopped
- 1 teaspoon dried basil
- Â1/2 teaspoon dried thyme
- 1-pound ground beef (10% fat or less)
- 3/4 cup The Naked Grape Cabernet Sauvignon
- 1/2 cup whole milk
- 2 cups canned crushed tomatoes
- Salt and freshly ground black pepper to taste
- 10 ounces dry spaghetti pasta
- Optional: Freshly grated Parmesan cheese and fresh basil to serve

You know when a recipe comes along and it just knocks you on your buns? Yea, well, strap in
- 1 Tbsp. vegetable oil
- 1 Tablespoon chili powder
- 1/2 teaspoon garlic powder
- 2 teaspoons cumin
- 1/2 teaspoon salt
- 1 lb. (2) boneless skinless chicken breasts, cut into chunks
- 1/2 yellow onion, diced
- 2 cloves garlic, minced
- 1 15oz. can diced tomatoes, slightly drained
- 1 Tbsp. tomato paste
- 1 15oz. can kidney beans, drained
- 1 15 oz. can black beans, drained
- 4 cups (32 oz.) low-sodium chicken broth
- 2 cups whole grain elbow pasta, or your choice
- Toppings
- Shredded cheese
- Chopped cilantro

Crispy Cheddar & Jalapeño Coated Chicken Breasts

The lively Mexican flavors in in this crispy coating make it a good match for a cold beer
- 4 small boneless, skinless chicken breast halves (6 to 7 oz. each), trimmed of excess fat
- 1 cup plain yogurt, preferably whole-milk
- 1 Tbs. chopped fresh thyme
- 1 Tbs. light brown sugar
- 2 tsp. chili powder
- 1 tsp. garlic powder
- 1 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 2 cups Toasted Breadcrumbs
- 1/4 lb. tortilla chips, crushed into coarse crumbs (about 1-1/3 cups)
- 1/4 lb. sharp Cheddar, grated (about 1 lightly packed cup)
- 1/2 to 2/3 cup sliced jarred jalapeños, chopped and patted dry

- 1 recipe for homemade pizza dough
- 8 slices of Sandwich Pepperoni, quartered
- 1 medium onion, sliced root to tip
- 1/2 pound Ground Italian Sausage
- 1-1/2 cups Freshly Grated Mozzarella
- 1/2 cup Freshly Grated Sharp Provolone
- 1 whole Egg, beaten
- PIZZA SAUCE
- 8 ounce can of Tomato Sauce
- 1/2 teaspoon Italian Seasoning
- 1/4 teaspoon dried Basil
- 1/4 teaspoon Garlic Powder
- a pinch of Red Pepper Flakes {optional}
- Kosher Salt and Black Pepper to taste
Pork Chops with Smoky Mole-Style Rub

In a small skillet, toast the cumin seeds over moderate heat until fragrant, about 1 minute
- 1 tablespoon cumin seeds
- 2 tablespoons smoked sweet paprika
- 1 tablespoon muscovado or dark brown sugar
- 1 tablespoon ancho chile powder
- 1 tablespoon dried oregano
- 1 teaspoon granulated garlic
- 1 teaspoon unsweetened cocoa powder
- 1 teaspoon toasted sesame seeds
- Four 1-inch-thick pork rib chops (about 2 3/4 pounds)
- Kosher salt
- Freshly ground black pepper
Mexican Shrimp Cocktail

1 If you have pre-cooked, peeled and deveined shrimp you can skip to the next step
- 1 pound medium shrimp, raw or cooked
- Salt
- 1 cup chopped red onion
- 1 cup peeled, diced cucumber
- 1/2 cup chopped celery
- 1 jalapeno, minced
- 1 15-ounce can whole peeled tomatoes, chopped OR 1 1/2 cups of freshly chopped tomatoes with their juices
- 1/2 cup ketchup
- 1/4 cup chopped cilantro
- Juice of a lime, about 2 Tbsp
- Hot sauce (like Crystal or Tabasco) to taste (about 1 Tbsp to 1/4 cup of Crystal)
- 1 avocado, cut into chunks

FOR THE BREADSTICKS: In the bowl of your mixer; combine the honey, warm water and yeast
- FOR THE BREADSTICKS:
- 2 tablespoons Honey
- 1 1/2 cups Warm Water (between 110 - 120 degrees F)
- 1 packet Active Dry Yeast {2-1/4 teaspoons)
- 4 1/4 cups All-Purpose Flour
- 1 tablespoon Kosher Salt
- 2 tablespoons Unsalted Butter, melted
- BREADSTICK TOPPING:
- 6 tablespoons Unsalted Butter, melted
- 1 teaspoon Kosher Salt
- 1 teaspoon Garlic Powder
- FOR THE GARLIC CHEESE DIP:
- 1 {8 ounce} brick Cream Cheese, softened
- 1 Garlic Clove, pressed in a garlic press
