Curried Vegetable Stew

This stew is to vegetarians what a pot roast might be to those who eat meat
- Olive oil for the pan
- 1 cup brown onion, thinly sliced
- 2 tablespoons garlic, roots removed, roughly chopped
- 8 ounces crimini mushrooms, thinly sliced
- 1/8 teaspoon cloves
- 1/4 teaspoon cardamom
- 1/2 teaspoon cinnamon
- 1/2 teaspoon turmeric
- 1/2 teaspoon chile flakes
- 1 teaspoon ground cumin
- 2 teaspoons fresh thyme, finely chopped
- 1 cup peeled carrots, cut into bite-sized pieces
- 1 cup parsnips, cut into bite-sized pieces
- 1 cup baby Dutch potatoes, cut into bite-sized pieces
- 4 cups kale, loosely packed , roughly chopped
- 3 cups tomatoes, roughly chopped
- 1 cup coconut water
- 1/2 teaspoon raw cane sugar
- 1/2 teaspoon sea salt
Homemade Tomato Sauce

1.Bring a large stockpot of water to a boil
- ◦4-5 pounds very ripe tomatoes
- ◦2 tbsp olive oil
- ◦pinch of salt

- 1 stick unsalted butter (1/2 cup or 1/4 pound), melted

- 1/3 cup grated Parmesan cheese (or 2/3 cup if you are using a Microplane zester)
- 2 Tbsp chopped fresh parsley
- 1/4 teaspoon salt
- 1/4 teaspoon garlic salt
- A large pinch of Italian seasoning (herb mix)
- 1/8 teaspoon ground black pepper
- 2 lbs of skinless, boneless, chicken meat, cut into pieces no larger than 2x2 inches
