Homemade Baked Beans with Eggs and Chorizo

Arancini with Gorgonzola

Curtis Stone's prosciutto wrapped prawn skewers

1. To make the skewers, gently wrap a strip of prosciutto around the top and centre portion of each prawn
- For the prawns
- 12 thin slices prosciutto, cut into quarters lengthwise
- 48 raw Crystal Bay prawns, peeled and deveined, tails intact
- 16 bamboo skewers, soaked in water
- 2 tbsp Coles Brand olive oil

Fish and Prawn Curry

- 600 g fish fillets (firm flesh fish such as: gemfish, monkfish or barramundi)
- 200 g uncooked green prawns
- 1 onions, diced
- 1 tbs. fresh ginger, grated
- 2 garlic cloves, finely chopped
- 1/2 chilli, finely chopped (optional)
- 1 tsp. lemon grass
- 2 tbs. of curry powder
- 1 pinch cumin powder
- 1 pinch turmeric
- 1 kaffir lime leaf (optional)
- Juice 1 lime + extra wedges for garnish
- 1 tomato, chopped
- 1 cup sweet potato cut into 2cm x 2cm cubes
- 400 ml coconut milk
- Salt and pepper
- 1/2 bunch coriander, leaves picked

Directions Place potatoes in a large saucepan and cover with water
- 2-1/2 pounds potatoes, peeled and cubed (about 3 large potatoes)
- 2 ounces cream cheese, softened
- 2 tablespoons milk
- 1 tablespoon butter, softened
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped green onion
- 2-1/2 teaspoons onion soup mix
- 1/2 teaspoon salt
- 1/8 teaspoon hot pepper sauce
- Dash pepper
- 1 egg, lightly beaten
- 1-1/2 cups crushed cornflakes

- 20 large prawns, cooked, de shelled, and deveined
- 2 leaves lettuce shredded
- 1 avocado, peeled, de seeded, and cut into 1 cm dice
- 2 sprigs dill
- 1 tablespoon, salmon roe (optional)
- One lemon
- Salt & pepper
- Cocktail sauce
- 1/4 cup good quality organic mayonnaise (or home made if you prefer)
- 1 tab tomato sauce
- 3 drops Tabasco
- 1 teaspoon Worcestershire sauce
- 1 teaspoon lemon juice
