Arepas Stuffed with Reina Pepiada

1. Adjust your oven racks to the upper- middle and lower-middle positions and preheat the oven to 350 degrees F
- For the arepas:
- 2 cups Harina P.A.N white corn
- 2 1/2 cups of water
- 1 tablespoon sugar
- 1 teaspoon kosher salt
- 4 tablespoons (1/2 stick) unsalted butter, melted
- 2 tablespoons vegetable oil
- For the reina pepiada:
- 2 cups cooked and shredded chicken (about 1/2 rotisserie chicken)
- 1 cup, scallions, thinly sliced
- 1/4 cup light mayonnaise
- 2 tablespoons of fresh lemon juice
- 1/2 cup finely chopped fresh cilantro
- Kosher salt and freshly ground black pepper
- 1 Hass avocado, halved, pitted, peeled, and finely diced
- 1 cup of baby Arugula
Mushroom Enchiladas

Cook’s Notes My favorite national brand of flour tortillas is Mission
- 1 1/2 pounds portobello mushrooms (about 6 medium to large)
- 3 T fresh lime juice
- 2 t ground cumin
- Kosher salt
- 1/4 c plus 1 T vegetable oil
- 3 garlic cloves, 2 unpeeled
- 3/4 pound plum tomatoes (about 3 medium)
- 1 medium unpeeled onion
- Freshly ground black pepper
- Eight 8-inch flour tortillas
- Half a 4 1/2 ounce can chopped green chiles
- 1 ripe Hass avocado
- 1/2 c fresh cilantro leaves
- 3/4 c sour cream
Spiced Creamy Red Lentil Soup (Shorbet Adds)

- 3 tablespoons olive oil
- 3 cloves garlic, crushed
- 1-1 1/2 teaspoons cumin
- 1-1 1/2 teaspoons ground coriander
- Pinch of ground chili pepper
- 1 3/4 cups split red lentils
- Bunch of celery leaves, chopped
- 1 carrot, finely chopped
- 2 quarts chicken stock
- Salt and pepper
- Juice of 1/2 to 1 lemon
A & P Grocery Store Spice Cake

Cream butter, shortening, add eggs
- Sift together:
- 2 1/2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/4 tsp ginger
- 1/2 tsp.. nutmeg
- 1/2 cup butter
- 1/4 cup solid shortening
- 1 1/2 cup sugar
- 2 large eggs, beaten
- 1 tsp vanilla
- 1 cup chunky applesauce
- 1 cup plump raising
- Optional 1/2 cup rough cut toasted walnuts
- Frosting:
- 8 oz cream cheese, softened
- 4 Tbsp. butter
- 2 tsp vanilla
- 2 1/4 cup powdered sugar
- 1/2 cup milk 1 tsp lemon juice
- Beat until smooth, and frost cake

- ■lettuce of your choice (I usually use romaine or green leaf)
- ■tortillas (whatever kind/size you like—I usually use 12″ white or wheat wraps)
- ■cheddar cheese (the sharper the better!)

- 4 teaspoons dried minced onion
- 3 teaspoons chili powder
- 1 teaspoon cornstarch
