Grilled Pork Tenderloin

1. Preheat the grill to medium
- 1/4 cup firmly packed light brown sugar
- 1/4 cup cider vinegar
- 1/4 cup soy sauce
- 2 teaspoons dry sherry, optional
- 1 teaspoon honey
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/8 teaspoon cayenne pepper
- 4 cloves garlic, minced
- 1 pork tenderloin (about 1 1/2 to 2 pounds)
Banana Pudding

Separate the yolks from the whites of 3 of the eggs; set aside the whites
- 4 large eggs
- 3/4 cup sugar
- 3 tablespoons all-purpose flour

- 1 cup fresh baby spinach
- 3/4 cup frozen green grapes

Pumpkin and Sage Pasta

Heat a medium non-stick skillet over medium-high heat
- 1 pound penne with lines
- 1 tablespoon extra-virgin olive oil (EVOO)
- 1 pound bulk sweet Italian sausage
- 1 medium onion, finely chopped
- 4 cloves garlic, chopped
- 1/2 cup dry white wine
- 1 cup chicken stock
- 1/3 cup heavy cream
- 10 leaves sage, cut into thin slivers
- 1 14-ounce can pumpkin puree
- 1 cup shredded Pecorino Romano cheese
- 1/4 teaspoon freshly grated nutmeg (eyeball it)
- 1 bunch chives, chopped
- Salt and freshly ground pepper
Simple Baklava

- 1/2 cup almonds
- 1/2 cup walnuts
- 1/4 cup chopped dried apricots
- 1/4 cup plain bread crumbs
- 2 tablespoons sugar
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves

1. BEAT sugar and shortening in bowl of electric mixer at medium speed until well blended
- 1 cup sugar

- 1 1/2 cups 100% apple juice, chilled
- 1 cup dark rum, chilled
- 1/2 cup club soda or sparkling water, chilled

- 1 green or red apple, unpeeled, cored and thinly sliced
Crispy Smoked Mozzarella with Honey and Figs

In a large pot, heat the vegetable oil over medium heat to 350 degrees F
- 6 sheets phyllo dough
- 6 ounces smoked mozzarella, cut into 6 equal pieces
- Vegetable oil, for frying
- 8 ounces dried figs, stemmed and quartered
- 3/4 cup honey, plus more for drizzling
- 3 teaspoons black sesame seeds

- 5 to 6 tablespoons ice cold water

- 1/2 cup granulated sugar
- 1/2 cup firmly packed brown sugar
