Banana Drop Cookies

Grease and flour 3 baking sheets
- 1 1/2 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup wheat germ
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/4 tsp cinnamon
- 5 Tbsp (about 1/3 cup) soft tub margarine, softened
- 1 cup mashed bananas (about 1 1/2 large bananas)
- 1/4 cup orange juice
Chocolate Truffles

Chop the chocolates finely with a sharp knife
- 1/2 pound good bittersweet chocolate (recommended: Lindt)
- 1/2 pound good semisweet chocolate (recommended: Ghiradelli)
- 1 cup heavy cream
- 2 tablespoons orange flavored liqueur, optional (recommended: Grand Marnier)
- 1 tablespoon prepared coffee
- 1/2 teaspoon good vanilla extract
- Confectioners' sugar
- Cocoa powder
Fruit Salad with Orange-Vanilla Syrup

Place the sugar, 1 cup water, orange zest, juice and vanilla bean in a small pan and stir to dissolve the sugar

- 2 sticks butter, at room temperature
- 3 tablespoons chopped fresh rosemary
- 2 tablespoons orange zest, julienned
- 3 cups apple cider
- 2 cups brown sugar
- 1 cup kosher salt
- 3 tablespoons tricolor peppercorns
- 5 whole bay leaves
- 5 cloves garlic, minced
- 4 sprigs rosemary, leaves stripped off
- Peel of three large oranges, removed in large strips
Chocolate-Hazelnut Ravioli

- 16 wonton wrappers
- 1 egg, beaten to blend
- 1 cup chocolate-hazelnut spread (recommended: Nutella)
- Vegetable oil, for frying
- 16 fresh mint leaves
- Nonstick vegetable oil spray
- Granulated sugar, for dredging
- Powdered sugar, for dusting

For the dough: In a medium saucepan scald milk; add shortening, 3 Tablespoons granulated sugar, salt and cinnamon

- 1/3 cup shortening (I used butter flavored Crisco)
- 4 Tablespoons granulated Sugar
- 2 teaspoons salt
- 2 teaspoons cinnamon
- 1/4 cup lukewarm water
- 2 (1/4 ounce) envelopes yeast
- 2 large eggs, beaten
- 4 3/4 cups flour
- Maple Icing
- 1/3 cup butter
- 1 cup packed brown sugar
- 1/4 cup milk
- 1 1/2 cups powdered sugar
- 2 teaspoons mapleine (found by the flavor extracts and seasonings)
Pecan Pie with Chocolate-Cinnamon Whipped Cream Topping

Whip cream, liqueur, cinnamon and chili powder together until stiff peaks form
- 2 cups whipping cream
- 1 shot orange liqueur (recommended: Grand Marnier) (buy a tiny bottle, a nip, if you like)
- 1/4 teaspoon ground cinnamon, eyeball it in your palm
- 2 pinches chili powder or ground cayenne
- 1 (3-ounce) baking bar semisweet chocolate, chopped (recommended: Ghiradelli brand)
- 2 store bought pecan pies, serve warm or chilled, as you like
Meatloaf with Mushrooms and Chestnuts, Gravy and Celery Root Duchess Potatoes

- For the Potatoes:
- 3 large russet potatoes, pricked all over with a fork

- 1 pound celery root, peeled and cut into cubes
- 4 tablespoons butter
- 2 egg yolks plus 1 egg

- 1 cup panko or homemade coarse breadcrumbs

- 1/2 pound mushrooms, finely chopped
- 1 teaspoon fennel seed, 1/3 palmful

- 1/4 cup grated Parmigiano-Reggiano cheese

- For the Gravy:
- 4 tablespoons butter
- 1 teaspoon coarse black pepper
- 3 tablespoons flour
- 3 cups veal or beef stock
- 1 tablespoon Worcestershire sauce
