Spaghetti with Tapenade Sauce and Roasted Tomatoes

Heat the oven to 400 degrees F
- Salt
- 1 pound spaghetti
- 1 pint cherry tomatoes, halved and seeded
- Freshly ground black pepper
- Extra-virgin olive oil for drizzling, plus 3 tablespoons
- 1/2 teaspoon dried oregano
- 4 anchovy fillets
- 3 tablespoons chopped capers
- 1/2 teaspoon crushed red pepper flakes
- 3 to 4 cloves garlic, finely chopped
- 1 cup packed, pitted black olives, finely chopped, with some brine (recommended: Kalamata)

- Directions:
- 2 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1/4 teaspoon ground ginger
- 3/4 cup unsweetened cocoa
- 3 sticks butter (1 1/2 cups), softened
- 2 1/4 cups granulated sugar
- 3/4 cup dark brown sugar
- 6 eggs, room temperature
- 1 1/4 cups canned pumpkin puree
- 2/3 cup plain yogurt
- 4 ounces chopped dark chocolate
- 1/2 cup heavy cream
- 1 teaspoon vanilla
- 1 tablespoon butter
- 1 teaspoon corn syrup
- salt
- Put chocolate, heavy cream, vanilla, butter, corn syrup and a pinch of fine salt in a heatproof bowl set over a saucepan of simmering water (but not touching) until melted, stirring until smooth.

Stracotto (Pot Roast) with Porcini Mushrooms ****

- 1 (5-pound) boneless beef chuck roast
- Kosher salt and freshly ground black pepper
- 1/4 cup olive oil, divided
- 2 onions, chopped
- 6 cloves garlic, crushed
- 1 cup red wine, such as cabernet sauvignon or pinot noir
- 1 (15-ounce) can low-sodium beef broth, plus extra, as needed
- 1/2 ounce dried porcini mushrooms
- 1 large sprig fresh rosemary, leaves removed and chopped
- 6 sprigs fresh thyme, leaves removed and chopped

- 5 sweet potatoes, cut into about 1 by 5-inch "fries"
- 3 tablespoons olive oil

- 2 teaspoons kosher salt

- 3/4 cup mayonnaise
- 1 clove garlic, minced

In a medium pan, melt the butter
- 4 tablespoons butter
- 3 cloves garlic, finely minced
- 2 medium onions, chopped
- 1 pound cremini mushrooms, roughly chopped
- 1 pound white mushrooms, roughly chopped
- 8 ounces shiitake mushrooms, stems removed, roughly chopped
- 2 cups long-grain rice
- 1/2 cup white wine
- 3 cups chicken stock
- 1/4 teaspoon turmeric
- Salt and freshly ground black pepper
- 2 tablespoons chopped fresh parsley
Spring Chicken and Vegetable Soup

Heat oil in a soup pot over medium heat
- 2 tablespoons olive oil
- 6 to 8 cups chicken stock, homemade or store-bought
- A pinch of saffron threads, optional
- 1 bunch spring onions or 2 to 3 leeks, sliced
- 2 carrots, chopped
- 4 cloves garlic, chopped
- Salt and pepper
- Juice of 1 lemon and 1 tablespoon zest
- 1 bundle thin asparagus, trimmed and thinly sliced on an angle
- 1 cup fresh shelled peas
- 1/2 poached or rotisserie chicken, skin and bones removed, chicken diced or shredded (use remaining chicken another night for dinner!)
- Thin egg noodles or fideo, a couple of handfuls
- 1/2 cup flat-leaf parsley, chopped

- 12 ounces good-quality bittersweet chocolate
- 1 cup heavy cream
- 4 ounces (8 tablespoons) unsalted butter, at room temperature
- 1/4 cup good-quality liqueur (rum, Cognac, Armagnac, Grand Marnier)
- For the Dipping:
- 2 pounds good-quality bittersweet chocolate
- 8 ounces Dutch-processed cocoa powder (optional)

- 1 large onion, chopped
- 3 peppers cut in strips (green, yellow & red)
- 1 box fresh whole mushrooms- chopped
- 1 box whole wheat or whole grain pasta (cooked according to directions)
- 1 jar green pesto
- 2 tbsp. olive oil
- 1 pkg. cooked grilled chicken strips

Boil sweet potatoes 6-7 minutes in salted water
- 4 medium sweet potatoes, peeled
- Salt
- Olive or vegetable oil, for drizzling, plus about 2 tablespoons
- 4 8-ounce boneless pork loin chops
- Black pepper
- 3 to 4 cloves garlic, finely chopped
- 1 large shallot, finely chopped or 2 to 3 scallions, whites and greens finely chopped
