Comfort Meatballs

For the meatballs: In bowl, combine the ground beef and oats
- 1 1/2 pounds ground beef
- 3/4 cup quick oats
- 1 cup milk
- 3 tablespoons very finely minced onion
- 1 1/2 teaspoons salt
- Plenty of ground black pepper
- 4 tablespoons canola oil
- 1/2 cup all-purpose flour
- 1 cup ketchup
- 4 to 6 tablespoons minced onion
- 3 tablespoons distilled white vinegar
- 2 tablespoons sugar
- 2 tablespoons Worcestershire sauce
- Dash of hot sauce, such as Tabasco
Banana Split Funnel Cake

Whisk together the flour, baking powder and salt in a large bowl
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups milk
- 1/2 cup Strawberry Syrup, plus more for garnishing, recipe follows
- 2 eggs
- Vegetable oil, for frying
- Powdered sugar, for dusting.
- 4 cups vanilla ice cream
- 2 cups strawberries, sliced
- 4 bananas, sliced 1/4-inch thick
- Chocolate sauce, for drizzling
- 1 cup heavy cream, whipped and sweetened with 1 tablespoon powdered sugar
- 1/2 cup chopped pecans, optional
- 8 maraschino cherries, with stems
My Mama's Braciole (Rachael Ray)

- 8 slices beef braciole, beef very thinly sliced
- Coarse salt and black pepper
- 8 slices prosciutto di Parma
- 1 1/2 cups plain bread crumbs, eyeball it
- 1/2 cup milk, eyeball it
- 2/3 cup Parmigiano-Reggiano, 3 handfuls
- 1 small onion, finely chopped
- 1/2 cup flat-leaf parsley leaves, a couple of handfuls, chopped
- 1 cup chopped arugula
- Plain round toothpicks
- 2 tablespoon extra-virgin olive oil, 2 turns of the pan
- 2 cloves garlic, cracked away from skin
- 2 tablespoons butter
- 12 crimini mushrooms, finely chopped
- 2 tablespoons flour
- 1 cup dry white wine
- 1 cup beef broth
- 1 rounded tablespoon tomato paste
Chocolate Macchiato

Pour each shot of espresso into a mug
- 4 shots espresso (or 1 1/3 cups regular coffee)
- 1 cup heavy cream
- 1 cup chocolate liqueur
- Whipped cream, recipe follows
- Cocoa powder, for sprinkling
Sliders

Preheat the grill to medium heat
- 2 pounds ground beef
- 4 tablespoons heavy whipping cream
- 6 dashes Worcestershire sauce (less if you prefer)
- 1 teaspoon kosher salt
- Freshly ground black pepper
- 8 whole dinner (or slider) rolls, split
- 1 pound thick-cut peppered bacon
- 3 yellow onions, halved and sliced
- 3 tablespoons butter
- 8 ounces gorgonzola
- Cooked sliders and/or macaroni and cheese, for serving
Rice Pilaf

Heat a pot with a tight-fitting lid over medium heat with the lid off
- 3 tablespoons butter
- 1/4 to 1/3 cup (a small handful) 1-inch pieces broken regular thin spaghetti
- 1 cup white rice
- 2 cups chicken stock

- ■6 eggs, separated
- ■3/4 cup sugar
- ■2 cups heavy cream
- ■2 cups milk
- ■Brandy, whiskey, or rum, to taste
- ■Nutmeg, for dusting
Dad's Favorite Deviled Eggs

Place the eggs in enough cold water to cover in a large saucepan with a lid
- 12 eggs
- 3/4 cup Miracle Whip salad dressing or mayonnaise
- 4 teaspoons Dijon mustard
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon kosher salt
- Ground black pepper to taste
- Fresh parsley leaves
