Cheesesteak Egg Rolls

Preheat oven to 375ºF. Heat EVOO in a skillet over medium-high heat
- For the provolone cheese sauce:
- 3 tablespoons EVOO – Extra Virgin Olive Oil
- 3/4 pound ground chuck
- Salt and pepper
- 1 onion, chopped
- 2 cubanelle peppers, chopped
- 2 tablespoons Worcestershire sauce
- 1 package egg roll wrappers
- All-natural cooking spray
- Sesame seeds, for sprinkling
- 4 tablespoons butter
- 3 tablespoons flour
- 2 cups milk
- Salt and pepper
- 2 cups provolone cheese, shredded

- For the icing:
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda

- 4 skinless, free-range, organic boneless chicken breasts, washed and dried

- 2 cups plain bread crumbs (Japanese panko makes the crispiest crust) mixed with 1 teaspoon freshly ground pepper and 1 teaspoons coarse salt

- 2 cups cherry tomatoes

- 2 cups wild arugula

Prosciutto-Wrapped Chicken with Cannellini Beans

- 8 boneless, skinless chicken thighs
- Salt and pepper
- 2 tablespoons rosemary, finely chopped
- 8 slices prosciutto di Parma or speck (smoky ham)
- 3 tablespoons EVOO – Extra Virgin Olive Oil, divided
- 2 ribs celery, finely chopped
- 2 carrots, chopped
- 1 onion, chopped
- 1 small chili pepper, seeded and finely chopped
- 3 to 4 cloves garlic, finely chopped
- 2 tablespoons tomato paste
- 1/2 cup white wine
- 1/2 cup chicken stock
- 2 cups passata or tomato purée
- 1 15-ounce can cannellini beans, drained
- A few leaves of basil, torn
- Crusty bread for mopping
Chocolate Cream Puffs

To make the Ganache: In a saucepan heat the cream over medium heat
- Cream Puffs:
- 1 cup 2% milk (you can also use skim or whole milk, but it will effect the flavor and crispness of your cream puff.)
- 8 ounces unsalted butter, cut into 1-tablespoon pieces
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1 1/4 cups unbleached all-purpose flour
- 4 extra large eggs, whisked together in a small bowl
- Ganache for filling and glaze:
- 2 cups heavy cream
- 16 ounces semisweet or bittersweet chocolate, finely chopped
- 2 tablespoons corn syrup
- 1 cup raspberry preserves
Guacamole

In a mixing bowl, douse the red onions with the citrus juice and a liberal sprinkle of salt
- 1/2 small red onion, finely chopped
- Juice of 1 lemon
- Juice of 1 lime
- Salt
- 2 avocados
- 1 large jalapeño, seeded and finely chopped
- A small handful cilantro leaves, finely chopped
- 1 large or 2 medium cloves garlic, pasted or grated
Apple Spice Cake with Cream Cheese Icing

- 3 Granny Smith apples, peeled and cored, cut into 1/2-inch dice and tossed with a little lemon juice
- 1/2 lemon, juiced
- 1 cup apple cider
- 1 3/4 cups all-purpose flour, plus extra for loaf pan
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 3 or 4 grates fresh nutmeg (about 1/2 teaspoon)
- 3/4 cup brown sugar
- 3/4 cup sugar
- Pinch kosher salt
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup toasted and chopped walnuts
- 1/2 cup golden raisins
- Cream Cheese Icing, recipe follows
- Special equipment: Standard loaf pan
- 1 (8-ounce) package cream cheese, at room temperature
- 1 stick butter, at room temperature
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
