- 1 tablespoon kosher salt
- Dressing
- 1/4 cupcoarse-grain mustard
- 3 tablespoons cider vinegar
- 3 tablespoon ssugar
- 1/4 cup peanut or vegetable oil
- 1/3 cup dry cured sausage, such as soppresata, pepperoni, or salami, cut in 1/4- to 1/2-inch pieces
- Freshly ground black pepper and kosher salt
- 1/2 cup torn fresh curly-leaf parsley
