Chocolate Chip Sour Cream Coffee Cake

Preheat oven to 350°F. Butter a 9-x-13-inch baking pan

- 1/2 cup unsalted butter (1 stick, 4 ounces or 113 grams) at room temperature
- 1 1/2 cups (300 grams) granulated sugar
- 3 large eggs, separated
- 1 1/2 teaspoons vanilla extract
- 2 cups (16 ounces) sour cream
- 3 cups (375 grams) all-purpose flour
- 1 teaspoon baking powder
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon table salt
- Filling and Topping
- 2 cups or 12 ounces semi- or bittersweet chocolate chips or coarsely chopped chocolate bars
- 1/2 cup (100 grams) granulated sugar
- 1 teaspoon cinnamon

Pre-heat your oven to 180C and line one or 1 12 muffin baking pan with paper liners
- 125 g butter / 1 stick (room temperature)
- 1 cup of light brown sugar
- zest of an orange
- 1 t cinnamon
- 2 free-range eggs (large) – at room temperature
- 1/2 t vanilla extract
- 1/2 cup milk (125ml)
- 1 3/4 cup flour (220g)
- 2 t baking powder
- 1 1/2 cups of apples (peeled and cored) cut into small dice
- 1/2 cup of grated apple with the juice squeezed out

New Orleans-Style Red Beans and Rice

- 1 pound (450g) red kidney beans

- 1 tablespoon (15ml) vegetable oil or lard
