Italian Sunday Gravy

- 1 tablespoon vegetable oil
- 1 pound sweet Italian sausage
- 1 pound hot Italian sausage
- 2 onions , chopped medium
- 12 garlic cloves, minced
- 2 teaspoons dried oregano
- 1 (6-ounce) can tomato paste
- 1/2 cup dry red wine
- 1 (28-ounce) can diced tomatoes, drained
- 1 (28-ounce) can tomato sauce
- 2 pounds bone-in country-style spareribs , trimmed of excess fat
- 1 1/2 pounds flank steak
- 3 tablespoons chopped fresh basil
- Pepper
Pasta, Pesto, and Peas

In the bowl of a food processor fitted with a steel blade, puree the pesto, spinach, and lemon juice
- Pesto Ingredients:
- 1/4 cup good olive oil
- 1 1/2 cups pesto (packaged or see recipe below)
- 1 (10-ounce) package frozen chopped spinach, defrosted and squeezed dry
- 3 tablespoons freshly squeezed lemon juice
- 1 1/4 cups good mayonnaise
- 1/2 cup freshly grated Parmesan
- 1 1/2 cups frozen peas, defrosted
- 1/3 cup pignoli (pine nuts)
- 3/4 teaspoon kosher salt
- 3/4 teaspoon freshly ground black pepper
- 1/4 cup walnuts
- 1/4 cup pignoli (pine nuts)
- 3 tablespoons chopped garlic (9 cloves)
- 5 cups fresh basil leaves, packed
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 1/2 cups good olive oil
- 1 cup freshly grated Parmesan
- 4 servings of linguine (I used DeCio Pasta - Spinach Basil Garlic http://www.deciopasta.com/) - optional
Rösti

Put the potatoes in a large bowl, add cold water to cover and soak for 5 minutes
- 1 lb. Yukon Gold potatoes, peeled and shredded
- 1 3/4 tsp. all-purpose flour
- 1/2 tsp. salt
- 5 oz. Gruyère cheese, shredded
- 1 bunch green onions, white and light green portions thinly
- sliced, and dark green portion thinly sliced for garnish
- Freshly ground pepper, to taste
- 4 Tbs. (1/2 stick) unsalted butter
Deviled Curry Eggs

Directions 1.Place eggs in a medium saucepan; add cold water to cover by 1 inch
- 8 large eggs
- 1/3 cup light mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon white-wine vinegar
- 1 tablespoon minced shallot
- 1/4 teaspoon curry powder
- Coarse salt and ground pepper
- Paprika, for garnish

- Directions
- 1.Place eggs in a medium saucepan; add cold water to cover by 1 inch. Bring to a rolling boil. Remove pan from heat; cover, and let stand 13 minutes. Drain, and run eggs under cold water to cool them.
- 2.Meanwhile, in a medium bowl, mix together mayonnaise, mustard, vinegar, shallot, and horseradish or hot sauce.
- 3.Peel eggs, and halve lengthwise; remove yolks, leaving whites intact. Transfer yolks to bowl with mayonnaise mixture, and season with salt and pepper. Mash with a fork until smooth.
- 4.Mound yolk mixture into whites. Sprinkle with paprika just before serving, or cover with plastic wrap and refrigerate up to 8 hours.
Lasagna with Bolognese Sauce

Preheat the oven to 350 degrees F
- Tomato Sauce:
- 1/4 cup olive oil (preferably extra-virgin and organic)
- 2 medium yellow onions, peeled and chopped
- 8 cloves fresh garlic, peeled and chopped
- Sea salt and freshly ground black pepper
- 8 sprigs fresh thyme, washed
- 2 bay leaves, fresh or dried
- 8 pounds ripe (or even slightly overripe) red tomatoes, washed and chopped ( I use canned Sam Marzano)
- 1 1/2 cups tightly-packed fresh basil leaves, washed
- Pasta:
- 8 quarts water
- 2 tablespoons kosher salt
- 1 pound lasagna sheets
- 1 pound sliced Mozzarella
- 1 pound shredded Parmesan
- Bolognese Sauce:
- 1/4 cup olive oil, plus more as needed
- 1 1/2 pounds ground beef
- Kosher salt and freshly ground black pepper
- 2 carrots, rough chopped
- 1 onion, rough chopped
- 2 ribs celery, rough chopped
- 1/2 recipe tomato sauce (above)
- 1/4 cup whole milk
Chocolate Biscotti

Sift together the flour, cocoa, baking powder, and salt, and set aside
- 2 1/2 cups all-purpose flour
- 1/2 cup SCHARFFEN BERGER unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/8 teaspoon salt
- 12 tablespoons (6 ounces) unsalted butter, slightly softened
- but still cool
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1/4 cup dry white wine, such as Chardonnay
- 5 ounces SCHARFFEN BERGER 70% bittersweet chocolate, chopped into 1/2-inch chunks
- 1 tablespoon finely ground coffee beans
- 1 teaspoon ground cinnamon
Noodles with Grilled Rib Eye and Broccoli

Procedure: Combine the hoisin, orange juice and soy sauce with a whisk and reserve
- Ingredients:
- 1 pound noodles, egg-based
- (4) 8 ounce Rib Eye Steaks, 1” cut
- 1 pound broccoli florets
- 1 large white onion, julienned
- 2 tablespoons garlic, minced
- 2 tablespoons fresh ginger, minced
- 1 teaspoon dried chili flakes
- 1/4 cup soy sauce
- 1 cup hoisin sauce
- 1/4 cup dry white wine
- 3 ounces butter,unsalted
- 4 tablespoons soy bean oil
- 1/4 cup fresh squeezed orange juice
- Salt and pepper to taste
Blood Pressure Balancing Orange Cream Smoothie

Put everything in your blender (I recommend Vita-mix) and blend til smooth
- ■2 small bananas (preferably frozen — I cut my bananas into segments before I freeze them)
