Hot Wings (Tricia)

The sauce is great on shrimp in the shell also
- Canola oil, for frying
- 24 chicken wing parts (12 wings separated into 2 pieces)
- One 12-ounce bottle cayenne hot pepper sauce, such as Frank's
- 1 stick butter
- Several dashes Worcestershire sauce
- Several dashes hot sauce, such as Tabasco
- 1 package hidden valley party dip
- Blue cheese dip, for serving
- Celery sticks, for serving
Beef Patty Melt with Pimento Cheese

Blend together the sirloin and short ribs and sprinkle with salt and pepper
- HOMEMADE PIMENTO CHEESE:
- 10 ounces ground sirloin
- 6 ounces ground beef short ribs
- Kosher salt and cracked black pepper
- 1/4 cup vegetable oil
- 2 Spanish onions, thinly sliced
- Eight 1/2-inch-thick slices rye bread, buttered on one side
- Homemade Pimento Cheese, recipe follows
- 8 ounces sharp Cheddar, coarsely shredded
- 1/2 cup mayonnaise
- 1/2 cup finely chopped Vidalia onion
- 3.5 ounces diced jarred pimientos, drained
- 1 clove garlic, grated
- Dash hot sauce
Dutch Baby

You can use whole or lowfat milk instead of skim, but the Dutch Baby won’t be as crisp

- 2 tablespoons vegetable oil
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 2 teaspoons grated zest and 2 tablespoons juice from 1 lemon
- 1 teaspoon salt
- 3 large eggs
- 1 1/4 cups skim milk (see note)
- 1 tablespoon unsalted butter , melted and cooled
- 1 teaspoon vanilla extract
- 3 tablespoons confectioners' sugar

Buffalo Chicken Dip

Preheat the oven to 425 degrees F
- 8 ounces cream cheese
- 1/2 cup finely chopped celery
- 1/2 cup hot sauce (recommended: Frank's) more if you like it hotter
- 1 rotisserie chicken, shredded
- 1 cup crumbled blue cheese you may substitute, mozzerella, cheddar,
- Crackers, bread or carrot sticks, for serving
Velvet Chocolate Cake

Preheat oven to 350 degrees
- 1 pound SCHARFFEN BERGER 70% Cacao Bittersweet Chocolate, finely chopped
- 1 cup minus 1 tablespoon heavy cream
- 2 tablespoons sugar
- 1/2 cup strong coffee, kept warm but not hot
- 6 eggs, at room temperature
- 1/2 cup sugar
