Veggie Stuffed Mushrooms

1. Preheat oven to 400 F. Cut thin slice from stem end of each mushroom; discard
- 20 large mushrooms
- 1/2 cup broccoli, finely chopped
- 1/4 cup carrot finely chopped
- 1 tablespoon onion, finely chopped
- 1 cup seasoned croutons, crushed (about 1/2 cup)
- 1/2 cup (2 ounces) shredded cheddar cheese
- 1/2 teaspoon salt
- 2 tablespoons butter or margarine, melted
