Spinach and Saugage Lasagna

nice variation from the usual beef lasagna
- MEAT SAUCE:
- 3/4 lb. spinach lasagna noodles
- 1/4 c. freshly grated Parmesan cheese
- 1/2 lb. Italian sausage
- 2 tbsp. olive oil
- 1 onion
- 2 sweet red or green peppers, sliced
- 1 can plum tomatoes, pureed
- 1/4 tsp. salt & pepper
- SAUCE:
- 1/4 c. butter
- 1/4 c. flour
- 4 c. milk
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. nutmeg
- 1 pkg. spinach, cooked, squeezed & chopped
- 1 c. shredded mozzarella cheese
Nuts and Bolts Party Mixture

7 oz. box rice chex 7 oz. box corn chex 10 oz
- Mix:
- 7 oz. box rice chex
- 7 oz. box corn chex
- 10 oz. box cheerios
- 1 box thin pretzels
- 2 lbs nuts
- Mix and divide between two large aluminum pans
- 2 cups Wesson oil
- 2 Tbsp garlic salt
- 1 Tbsp celery salt
- 2 Tbsp Worcestershire Sauce
- Pour over cereal. Bake at 200 for 2 hours stirring every 15 minutes. Add the nuts the last hour of cooking.
Caramel Apple Crisp

Preheat oven to 350 F (175 degree C)
- 5 large Granny Smith apples - peeled, cored, and thinly sliced
- 1/2 cup white sugar
- 1 tablespoon all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1/4 cup water
- 1 1/2 cups all-purpose flour
- 1 cup brown sugar
- 1 cup quick cooking oats
- 1 cup butter, softened
- 1 (14 ounce) package individually wrapped caramels, unwrapped or 1/4 c caramel sauce
- 1 (5 ounce) can evaporated milk* skip ingredient if using prepared caramel sauce

Preheat the oven to 350 degrees
- 2 cups old-fashioned oatmeal
- 1 cup sliced almonds
- 1 cup shredded coconut, loosely packed
- 1/2 cup toasted wheat germ
- 3 Tbsp unsalted butter
- 2/3 cup honey
- 1/4 cup light brown sugar, lightly packed
- 1 1/2 tsp vanilla extract
- 1/4 tsp kosher salt
- 1/2 cup chopped pitted dates
- 1/2 cup chopped dried apricots
- 1/2 cup dried cranberries
Parmesan Chicken (Barefoot Contessa Recipe)

Pound the chicken breasts until they are 1/4-inch thick
- Lemon Vinaigrette:
- 4 to 6 * 4 to 6 boneless, skinless chicken breasts (after pounding thin you may only need 4 breast for 6 servings)
- 1 * 1 cup all-purpose flour
- 1 * 1 teaspoon kosher salt
- 1/2 * 1/2 teaspoon freshly ground black pepper
- 2 * 2 extra-large eggs (I used 3 large)
- 1 * 1 tablespoon water
- 1 1/4 * 1 1/4 cups seasoned dry bread crumbs (I used 3/4 cup panko and 3/4 cup Italian seasoning)
- 1/2 * 1/2 cup freshly grated Parmesan, plus extra for serving
- * Unsalted butter (I used salted butter)
- * Good olive oil
- * Salad greens for 6, washed and spun dry (I used spring greens)
- 1/4 * 1/4 cup freshly squeezed lemon juice (2 lemons)
- 1/2 * 1/2 cup good olive oil
- 1/2 * 1/2 teaspoon kosher salt
- 1/4 * 1/4 teaspoon freshly ground black pepper
