Chocolate Banana Baked Oatmeal

1. Preheat the oven to 350 degrees
- 3-4 large bananas
- 2 large eggs
- 1/2 cup unsweetened cocoa powder
- 1/3 cup brown sugar
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 2 cups milk
- 2 1/2 cups old-fashioned oats
Italian Meat Sauce

Brown meat in oil Add remaining ingredients Simmer for at least 5 hours, stirring occasionally Serves 12-14
- 21/2 lbs. Hamburger meat
- 1/4 c oil
- 1 tsp garlic powder
- 1 c minced onion
- 1/2 tsp basil
- 1/2 tsp oregano
- 1 can tomatoes
- 6 cans tomato sauce
- 1 can tomato paste
- 1/4 tsp pepper
- 1 Tbsp salt
- 1 Tbsp Worcestershire sauce
- 1 can mushrooms
Miso Dressing

Combine the miso and vinegar (or vinegar and lime juice) in a small bowl and whisk together
- 1 rounded tablespoon white or yellow miso
- 2 tablespoons seasoned rice vinegar, or 1 tablespoon rice vinegar and 1 tablespoon fresh lime juice
- 1/2 teaspoon grated fresh ginger
- 1 small garlic press, minced or put through a press
- Pinch of cayenne
- 2 tablespoons dark sesame oil
- 2 tablespoons peanut oil or grapeseed oil
- 2 tablespoons plain low-fat yogurt
Spaghetti Squash with Asparagus, Ricotta,Lemon and Pine Nuts

Preheat oven to 375°F. Carefully cut the squash in half, scrape out the seeds, and brush with olive oil
- 1 small spaghetti squash (about 1 1/2 pounds)
- Olive oil
- 1 pound asparagus
- 1 medium lemon
- 3/4 cup ricotta
- 1 clove garlic, unpeeled
- Olive oil
- 1 teaspoon fresh thyme leaves, from 4 to 5 sprigs
- Salt and pepper
- 3 tablespoons pine nuts, toasted

- Grilled Mahi Mahi:
- 2 lbs. fo mahi mahi filets (cut into 1 1/2" strips)
- 1 teaspoon of smoked paprika
- 1 teaspoon of garlic powder
- 1 teaspoon of salt
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of dry cilantro
- 1/2 teaspoon of cracked pepper
- Chipotle Lime Crema:
- 3/4 cup of plain greek yogurt
- 1 chipotle pepper
- 1/2 teaspoon of garlic powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon of salt
- juice of one lime
- 3 cups of thinly sliced purple cabbage
- 1 lime cut into wedges
- 1/2 cup of fresh cilantro
- 2-3 avocados, sliced

Chicken Bacon Pumpkin Pasta Bake

- For the Pumpkin Sauce:
- 1 tablespoon butter
- 1 yellow onion
- a splash of white wine (optional)
- 1 clove garlic
- 18 ounces pumpkin puree (about 2 cups)
- 1 cup chicken broth
- 1 cup milk
- 1/4 cup olive oil
- 1 teaspoon salt
- 1 1/2 teaspoons rubbed sage
- a pinch of freshly grated nutmeg (or just ground)
- freshly cracked black pepper to taste
- For the Pasta:
- 1 lb. uncooked pasta
- 1 lb. boneless skinless chicken breasts
- 1 cup Mozzarella or other white melty cheese
- 1/4 cup Parmesan cheese
- crumbled, cooked bacon (as much or little as you want)
- parsley for topping
Cheese Tortellini and Sausage Soup (Crockpot)

1. Brown the sausage in a skillet on the stove top until cooked and crumbled
- 1 (19 oz.) bag frozen cheese tortellini
- 1 lb. sausage (I prefer Italian)
- 1 bag fresh spinach
- 2 cans Italian style diced tomatoes or crushed
- 2 cans low-fat chicken broth (28-30 oz)
- 1 (8 oz.) cream cheese, cut into cubes (can reduce to 4 oz)

- For the dough:
- 6 cups (768 grams) unbleached all-purpose flour
- 1 tablespoon kosher salt
- 1/4 cup (55 grams) sugar
- 2 1/2 teaspoons instant yeast
- 1 1/2 cups buttermilk or milk
- 1 cup boiling water
- 6 tablespoons (3/4 stick) unsalted butter, melted

- 1/4 cup (32 grams) flour, for clean surface

- 1/2 ripe avocado, peeled
- 3/4 cup lowfat buttermilk
- 3 tablespoons white wine vinegar
- 2 tablespoons coarsely chopped fresh tarragon leaves
- 1 scallion (white and green parts), coarsely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper

- 3 cups blueberries
- 1/4 cup water
- 3 tablespoons sugar
- 1 tablespoon lemon juice
- 1 cup extra blueberries, for garnish
