Lasagna Soup

1. In a small bowl, combine ricotta, Parmesan, salt and pepper, to taste; set aside
- 8 ounces elbows pasta
- 1 tablespoon olive oil
- 1 pound Italian sausage, casing removed
- 3 cloves garlic, minced
- 1 onion, diced
- 2 teaspoons oregano
- 1/2 teaspoon crushed red pepper flakes
- 2 tablespoons tomato paste
- 6 cups chicken stock
- 1 (28-ounce) can fire roasted diced tomatoes
- 2 bay leaves
- Kosher salt and freshly ground black pepper, to taste
- 1 cup shredded mozzarella cheese
- 1/4 cup fresh basil leaves, chiffonade
- FOR THE RICOTTA MIXTURE
- 8 ounces ricotta
- 1/2 cup grated Parmesan
- Kosher salt and freshly ground black pepper, to taste
Horseradish Cream Sauce

Place all of the ingredients into a medium mixing bowl and whisk until the mixture is smooth and creamy
- • 1 cup sour cream
- • 1/4 cup grated fresh horseradish
- • 1 tablespoon Dijon mustard
- • 1 teaspoon white wine vinegar
- • 1/2 teaspoon kosher salt
- • 1/4 teaspoon freshly ground black pepper
Peanut Butter Granola Bars

Position an oven rack in the middle of the oven
- Vegetable cooking spray
- 1 egg white (1/4 c liquid egg whites)
- 1/2 cup chunky peanut butter
- 2 cups homemade granola (using slivered almonds, cook for 45 minutes rather than 1 hour)
- 2-4 Tbsp grapeseed or canola oil
- 2-3 Tbsp maple syrup
- 1/3 cup miniature chocolate chips or chopped chocolate
Pork or Lamb Vindaloo Curry

1. Mix together the Vindaloo, vinegar, and salt into a paste and set aside
- 1 lb boneless pork or lamb shoulder cut into 1/2 to 1 inch cubes
- 2-3 Tablespoons Vindaloo Seasonings
- 1/4 cup cider vinegar
- 1 tsp salt
- 2 tablespoon oil
- 1 onion, chopped

Baked Spaghetti Squash Carbonara

- 3-pound spaghetti squash
- 8 ounces bacon (8 to 10 slices), diced
- 1 small yellow onion, diced
- 4 large eggs
