Tomato Tapenade and Goat Cheese Bruschetta

1. Slice the baguette into thin rounds (no more than /2 inch thick), discarding the end pieces
- 1 18-in French or Italian-style baguette, about 2 inches in diameter
- 1 28-oz can petite diced tomatoes
- 1/4 cup olive oil, divided
- 3 tbs balsamic vinegar, divided
- 1 small clove garlic, finely chopped
- 1/4 cup chopped kalamata olives
- 2 tbs finely diced red onion
- 2 tbs chopped fresh basil
- freshly ground pepper to taste
- 4 oz soft goat cheese
Chocolate-y Christmas Cafe au Lait

1. In a medium saucepan, whisk together the milk, 2/3 cup of the sugar, and cocoa until smooth
- 1 1/2 cups whole milk
- 2/3 cup plus 1 tsp sugar
- 1/2 cup unsweetened Dutch-process cocoa powder
- 2 (2-inch) cinnamon sticks
- 1 strip orange peel, about 1/2 inch by 3 inches
- 10 whole cloves
- 2 to 2 1/2 cups hot brewed strong coffee
- 1/4 cup cold heavy cream
- ground cinnamon and cocoa for garnish

1. Mix cake mix, 1/4 cup butter, and egg
- 1 yellow cake mix

- 1/2 cup butter
- 1 tsp vanilla
- 2 cup peanuts

Black Bottom Pie

1. Combine 1/2 cup sugar, salt and cornstarch in a medium sacuepan
- 1 cup granulated sugar, divided
- 1/4 tsp fine grain salt
- 2 tbs corn starch
- 3 large eggs, seperated (see note)
- 2 cups whole milk
- 5 oz unsweetened chocolate, finely chopped
- 1/2 tsp pure vanilla extract
- 2 prebaked pie crusts or chocolate cookie crusts
- 1/4 cup cold water
- 1 1/2 envelopes (about 3 3/4 tsp) unflavored gelatin
- 1/2 tsp dark rum or rum flavored extract
- 1/4 tsp cream of tartar
- 1 cup heavy cream, well chilled
- sifted cocoa, grated chocolate or cacao nibs, for garnish
- Note: To avoid the very small risk of bacteria contamination posed by raw egg whites, use 2/3 cup pure liquid pasteurized egg whites instead.
Eggs Benedict Casserole

- 2 packages (10-12 oz total) canadian bacon
- 8 large eggs
- 2 cups reduced fat or whole milk

Spinach & Artichoke Stuffed Portabello Mushrooms with Tomator and Bread Salad

Tidbit: Panzanella, stale bread salad, requires that you soak and wring out the bread before assembling the salad
- 8 portabello mushroom caps
- Extra-virgin olive oil, for brushing mushrooms, plus 1/4 cup
- 1 (10-ounce) box frozen chopped spinach, defrosted
- 1 can quartered artichoke hearts, drained well
- 1 1/2 cups ricotta cheese
- 1 egg yolk
- 1 clove garlic, grated with microplane or small side box grater
- Salt and freshly ground black pepper
- Freshly grated nutmeg, about 1/8 teaspoon
- 1/2 cup Parmigiano-Reggiano, a couple of handfuls
- 6 plum tomatoes, coarsely chopped
- 1 cup fresh basil leaves, about 20, torn
- 4 cups crusty bread, torn or coarsely chopped
- 1 small red onion, very thinly sliced
Banana Split Brownie Pizza

- 1 package (8 oz) cream cheese, softened
- 1 can (8 oz) crushed pineapple, drained

Pork Chops a la Blue

- 4 oz blue cheese, divided into 4 portions

Thai Style Ginger Lime Dressing
