Lemon/Lime/Orange Citrus Curd

A good recipe to make lemon curd, lime curd, orange curd or whatever citrus you have
- 4 eggs (room temperature)
- 1 cup of sugar
- The zest of 1 lemon, lime or orange (whatever citrust you choose)
- 2/3 cup of freshly squeezed and strained of pulp citrus juice (if your citrus is ripe, approximately the juice from 1 orange, 2 lemons or 4 limes)
- 1/4 cup of cold butter cut into cubes
