  • 1 4 pound beef chuck roast, trimmed of excess fat and cut into 1 inch cubes
  • 2 tsp salt
  • 8 slices bacon diced
  • 1 med onion, minced
  • 5 med garlic cloves minced or pressed
  • 4-5 small jalapeno chilies ribs and seeds removed, minced
  • 1 cup crushed tomatoes
  • 2 TBSP lime juice
  • 5 TBSP masa harina or 3 TBSP cornstarch
