PAPA A LA HUANCAINA

Sacar venas y pepas al ají, lavarlos bien frotándo uno contra otro
- 5 ají amarillo frescos
- 2 dientes de ajo pelados
- 400 g de queso fresco (ricotta, feta o cabaña)
- 1/2 taza de aceite vegetal
- 2 huevos cocidos
- 4 aceitunas de botija
- 1 k de papa amarilla (o blanca)
- Lechuga
- Sal
- Opcional: Leche al gusto
Apple Pie Ice Cream

Custard – In a medium pot, combine 1 cup of the heavy cream, the sugar, and the salt
- Custard:
- 2 cups heavy cream
- 2 cups whole milk
- 3/4 cup sugar
- 1/8 teaspoon salt
- 1/2 teaspoon vanilla extract
- Spiced Apples:
- 2 Granny Smith apples, peeled, cored, and cut into small bite-sized pieces
- 1/4 cup light brown sugar
- 1 teaspoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1 About 1 tablespoon softened butter, for buttering the baking dish
- 4 to 5 graham crackers, broken into bite-sized crumbles
Slow-Cooked Mustard Short Ribs

1. Pat ribs dry. Mix together salt, pepper and flour and dredge ribs in flour mixture
- 1 1/2 pounds boneless short ribs
- 1/2 teaspoon each salt and pepper
- 1/4 cup flour
- 4 tablespoons olive oil
- 1 pound baby red or yellow potatoes, cut in halves
- 1 large onion, cut into eighths
- 2 cups carrots, peeled and cut into 2 inch pieces
- 2 garlic cloves, minced
- 1 cup beef broth
- 2 tablespoons grainy mustard
- 2 tablespoons Worcestershire sauce
- 2 tablespoons cornstarch dissolved in 4 tablespoons cold water
- 1/4 cup heavy cream
- Garnish
- 1/2 cup sour cream
- 2 tablespoons grainy mustard
- 1 tablespoon chopped chives, plus more for sprinkling
Irish Cream with a Kick

Place all ingredients in a blender, mix for 30 seconds to a minute or till combined
- 1 cup Irish Whiskey (I use Jamieson’s)
- 1 cup 18% cream (table/coffee)
- 1 tbsp chocolate syrup
- 1 can condensed milk (I use Eagle Brand)
- 3 eggs
- dash salt
Quickie Amba (Pickled Mango Condiment)

Toss together all ingredients
- 1/2 mango, finely diced (slightly underripe is better, but not rock hard)
- 1/4 preserved lemon, pips removed, minced
- 1 teaspoon harissa
Sauerbraten (German Pot Roast)

1. Season beef liberally with salt in large bowl
- 1 (5-lb.) beef eye of round
- Kosher salt, to taste
- 2 cups red wine
- 1 1/2 cups red wine vinegar
- 3 large onions, thinly sliced
- 1 large carrot, thinly sliced
- 1 bouquet garni (1 tbsp. pickling spices, 14 whole cloves, 8 whole black peppercorns, 3 bay leaves, 3 sprigs thyme, 2 sprigs parsley, wrapped in cheesecloth, tied with kitchen twine)
- 4 tbsp. unsalted butter
- 4 slices bacon, finely chopped
- 3 tbsp. flour
- 2 tbsp. sugar
- 1/2 cup golden raisins
- 6 gingersnaps, crumbled
- Juice of 1/2 lemon
- 2 tbsp. chopped parsley
Parker’s Beef Stew

1.?Put the beef, red wine, whole garlic, and bay leaves in a bowl
- 2 1/2 pounds good-quality chuck beef, cut into 1 1/4-inch cubes
- 1 (750 ml bottle) good red wine, such as Cabernet Sauvignon
- 3 whole garlic cloves, smashed
- 3 bay leaves
- 6 ounces bacon, cut in 1-inch pieces
- All-purpose flour
- Kosher salt
- Freshly ground black pepper
- Good olive oil
- 2 cups chopped yellow onions
- 2 tablespoons minced garlic (4 cloves)
- 1 pound carrots, peeled and cut diagonally in 1 1/2-inch chunks
- 1 pound small potatoes, halved or quartered
- 1 (14 1/2 ounce can) beef stock
- 1 large (2 small) branch fresh rosemary
- 1/2 cup sun-dried tomatoes in oil, drained and sliced
- 2 tablespoons Worcestershire sauce
- 1 (10-ounce) package frozen peas (not petits pois)
Slow cooker honey lemon chicken

- 1 medium onion, sliced
- 2 lemons, sliced thick
- 4 skinless, boneless chicken breasts
- olive oil, salt, & pepper
- 1 head of garlic, cloves separated and peeled
