VEGGIE - Mushroom, Chilli & Cabbage Dumpling in Broth

Dumplings: 1. Place dried mushrooms in a medium-sized bowl and cover with hot water
- Dumplings:
- 100 g dried mushrooms – I used a mix of shiitake, oyster and black fungus
- 2 tsp sesame oil
- 2 tsp canola oil
- 3 cm piece ginger, peeled and very finely diced
- 1 long red chilli, very finely diced
- 3 cloves garlic, crushed
- 2 cups very finely shredded cabbage
- 1 tbsp soy sauce
- 1 tbsp Chinese black vinegar
- 2 tbsp oyster sauce
- Generous handful fresh coriander, finely chopped
- Generous handful garlic chives, finely chopped
- 30 wonton wrappers
- Broth:
- 1 L chicken stock
- 3 cups liquid leftover from soaking mushrooms
- 5 cm piece ginger, peeled and roughly chopped
- 3 cloves garlic, peeled and squashed
- 2 tbsp Chinese rice wine
- 1 tbsp sugar
- 1 tbsp chopped coriander stems
- 1 tbsp chopped garlic chives
COOKIES - Tangelo Pistachio & Dark Chocolate Cookies

Preheat the oven to 170degrees celsius
- 320 g wholemeal flour
- 1 tsp baking powder
- 1 tsp salt
- 225 g unsalted organic butter
- 230 g soft brown sugar
- 2 large eggs
- grated zest of 1 tangelo
- juice of 1 tangelo
- 110 g chopped 70% chocolate (lindt)
- 110 g chopped orange chocolate (lindt)
- 170 g shelled pistachios (whole)
CAKE - Victoria Sponge Cake

Line 2 qty 9" cake pans with parchment paper
- Filling:
- Cake - (Butter, sugar & flour in equal quantities by weight)
- 340 g unsalted softened butter
- 340 g all-purpose flour
- 340 g sugar
- 3 large eggs
- 1-1/2 tsp baking powder
- 20 ripe, fresh strawberries
- 2 tbs confectioners or icing sugar
- Cream:
- 1-1/2 cups heavy whipping cream
- 56 g cream cheese (optional) - i added
- 2 tbs lemon curd (optional) - i added
- 2 tbs icing or confectioners sugar & more for dusting on top of cake.
BREAD - Portuguese Sweet Bread

Stir yeast and 3 Tbsp sugar into potato water until dissolved
- 2 envelopes active dry yeast
- 3 Tbsp sugar
- 2 potatoes peeled, cubed, boiled and mashed to make 1 cup mashed potatoes (save the water used to boil the potatoes)
- 1/2 cup of the lukewarm potato water that you used to boil the potatoes
- 1/2 tsp ground ginger
- 1/2 cup each; milk, butter
- 1 tsp salt
- 6 extra-large eggs, beaten
- 1 1/2 cups sugar
- 7 cups flour
PORK - Spiced Cola Grilled Pork Rack

1. Put pork rack into a ziplock bag
- 1 kg pork rack
- 1 cup cola
- 100 gm ketchup
- 135 gm light brown sugar
- 1 tsp salt
- 2 Tbsp Worcestershire sauce
- 1 cinnamon stick
- 1 bay leaf
- 2 cloves garlic, bashed
- 2 shallots, halved and bashed
CONDIMENT - Spicy And Crispy Chili Paste

- 6 (150 grams) Shallots, sliced
- 6 Cloves (30 grams) Garlic, sliced
- 3 Tbsp Dried Shrimps, soaked and pat dry
- 30 grams Dried Chilies
- 3 Red Chilies, coarsely chopped
- 5 Bird’s Eye Chilies, chopped
- 2 Tbsp Cane Sugar
- 1/4 tsp Sea Salt
- 6 Tbsp Peanut Oil

SNACKS - Hush Puppies

1. Pour oil in a large pot and begin preheating on medium-high heat
- Ingredients:
- 1 cup cornmeal
- 1/2 cup all purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 1 1/4 teaspoon baking powder
- 1/2 teaspoon ground black pepper
- 1 egg
- 2/3 cup buttermilk
- 2 green onions, thinly sliced
- 1 quart oil for frying
- salt and pepper to taste
- spicy honey drizzle:
- 2/3 cup honey
- 2 Tablespoons fresh chili sauce (such as Sambal)
- sea salt to taste
SOUP - Creamy Spinach Soup

1. Saute onion, carrots and pepper in olive oil until just starting to brown
- 2 T. Olive Oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 hot peppers, chopped
- 2 cloves garlic, chopped
- 2 large potatoes, peeled and chopped
- 4 C. Chicken or Vegetable Stock
- 1 10 oz. box frozen, chopped spinach, thawed
- 1/4 C. chopped flat leaf parsely
- 1/2 T. fresh chopped thyme
- salt and fresh ground pepper to taste
- 1/2 C. cream

1. Beat Planta margarine, icing sugar, egg yolks, egg white and vanilla essence until creamy
- Original Recipe:
- 150 g Planta margarine
- 150 g icing sugar
- 2 egg yolks (I used 1 whole egg only)
- 1 egg white
- 1/2 tsp vanilla essence
- 350 g cornflour (sifted)
- 30 g milk powder (sifted)
- 60 g plain flour (sifted)
