Pumpkin Soup

1. In a Dutch oven, cook onion in butter till tender, but not brown
- 1 med. onion, coarsely chopped
- 2 T butter
- 3 c canned pumpkin
- 2 14 1/2 oz. cans chicken broth
- 2 T brown sugar
- 2 bay leaves
- 1/4 t ground nutmeg
- 1/4 t fresh-ground pepper
- 1 c whipping cream
- 1 c finely chopped cooked smoked ham

Fanciful Peppermint Fudge

- 2 5 oz cans evaporated milk (1 1/3 c total)

1. In a large Dutch oven, melt butter over med heat
- 1/2 c butter or margarine
- 3 med stalks celery (with leaves), chopped (1 1/2 c)
- 1 large yellow onion, chopped (1 c)
- 6 c crumbled corn bread or 6 c corn bread stuffing mix (2 8 oz packages)
- 6 c dry white or wheat bread cubes
- 2 c chopped unpeeled tart cooking appels, such as Granny Smith
- 1 c dried cranberries, cherries or raisins
- 2 T snipped fresh sage or 1 1/2 t dried sage leaves, crushed
- 1/2 t salt
- 1/2 t ground black pepper
- 1 3/4 to 2 c chicken broth (if using stuffing mix use 3 to 3 1/4 c chicken broth)
Blend of the Bayou Casserole

1. In a small saucepan, cook and stir the cream cheese and 2 T butter over low heat until melted and smooth
- 1 (8 oz) package cream cheese
- 4 T butter or margarine, divided
- 1 Large onion
- 2 celery ribs, chopped
- 1 Large green pepper, chopped
- 1 Lb cooked medium shrimp, peeled and deveined
- 2 (6 oz.) cans crabmeat- drained, flaked and cartilage removed
- 1 (10.75 oz.) can condensed cream of mushroom soup, undiluted

- 3/4 cup cooked rice
- 3/4 cup shredded Cheddar cheese
- 1/2 cup crushed butter-flavored crackers (Ritz)

- Crust:
- 1 (15 oz) pkg. Phillsbury Refrigerated Pie Crusts
- Filling:
- 1 (21 oz.) can cherry fruit pie filling
- 1 (16 oz.) can whole berry cranberry sauce
- 3 T cornstarch
- 1/4 t cinnamon
- Glaze and Topping:
- 1/2 c powdered sugar
- 1 T light corn syrup
- 3 to 4 t water
- 1/4 c almond slices
