Deep Fried Corn Meal Sticks (Sorullitos de Maiz)

Puerto Rican style corn fritters are just a little sweet and just and just a little salty
- 2 cups water
- 3 tablespoons white sugar, or more to taste
- 1 tablespoon butter
- 1 teaspoon salt
- 1 1/2 cups cornmeal, or as needed
- 3 cups vegetable oil for frying
- Vegetable oil
- 1/2 cup mayonnaise, or to taste
- 1/4 cup ketchup
- 1 pinch garlic salt, or to taste (optional)
Albondigas (Meatballs)

Mix the first 8 ingredients together and form balls about 1 1/2 inch in diameter
- 1 lb. ground beef
- 1/3 up fin dry bread crumbs
- 1/2 cup sofrito
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 large egg, beaten
- 3 tbsp. hot water
- 1/2 bunch of cilantro finely diced
- 1 quart beef broth
- 1 tbsp. sorito (for sauce)
- 8 oz tomato sauce
- 1/4 cup olives
- 1 tsp. capers

- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 cup (1/2 stick) cold unsalted butter, cut into small pieces

Kansas City Steak Strip

This one - dish supper is just the ticket when time is hort
- 1 tablespoon vegetable oil
- 12 ounces beef top round steak, trimmed and cut into thin strips
- 1 large yellow onion, sliced (about 1 1/2 cup)
- 1 can (8 ounces) low sodium tomato sauce
- 1/2 cup reduced sodium beef broth
- 1 tablespoon chili sauce
- 1/4 teaspoon black pepper
- 8 ounces egg noodles
- 8 ounces fresh green beans, cooked or 1 package (10 ounces) frozen cut green beans, thawed
Jamaican Jerked Chicken

1. Place soy sauce, lime juice, ginger, garlic, onions and peppers in food processor bowl
- 1 1/2 cups soy sauce
- 1 cup freshly squeezed lime juice
- 1 cup thinly sliced fresh ginger
- 1/2 cup chopped fresh garlic
- 4 green onions, trimmed and roughly cut
- 2 jalapeno peppers, seeded
- 1 cup apple cider vinegar
- 1/2 to 3/4 cup dark brown sugar
- 1/2 cup Crisco Oil
- 1/4 cup ground allspice
- 2 tablespoons light molasses
- 2 teaspoons cinnamon
- 2 teaspoons freshly chopped thyme (or 1 teaspoon dried)
- 1 teaspoon pepper
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 16 to 24 chicken thighs (about 6 pounds) with skin removed
Bacalaitos

Cut the bacalao in chunks, place in a pot, cover with water and boil on high for 15 minutes
- 1/4 lb. bacalao (cod fish)
- 3/4 cup flour
- 1/2 tsp. baking powder
- 1/3 tsp. salt
- 3/4 cup water
- 1 garlic clove
- 2 culantro leaves (cilantro)
- 1 envelope sazon seasoning
- Pepper sprinkle
- Vegetable oil
