  • ½ dark rum
  • ¼ dark brown sugar
  • ¼ white vinegar
  • 2 T salt
  • 4 tea minced garlic
  • 1 T black pepper
  • 1 T minced ginger
  • 1 ½ ground all spice
  • ¾ grated nutmeg
  • ½ tea ground cinnamon
  • ¼ ground cloves
  • Zest and juice of 4 limes
  • 1 4 to 6 lbs chicken cut into 8 pieces

1. In a large pot, heat the butter over moderate heat

  • If you're using canned chicken broth to make risotto, be sure it's low-sodium. The broth reduces at the same time that it's cooking into the rice, and regular canned broth would become much too salty.

  • • 1/2 cup dry white wine
  • • 1/2 cup grated Parmesan cheese, plus more for serving
  • • 2 tablespoons chopped fresh parsley
