Caribbean Jerk Chicken

Combine all the ingredients in a plastic bag
- 2 bunches of green onions
- 3 to 9 habanero peppers, seeded and chopped
- ½ vegetable oil
- ½ dark rum
- ¼ dark brown sugar
- ¼ white vinegar
- 2 T salt
- 4 tea minced garlic
- 1 T black pepper
- 1 T minced ginger
- 1 ½ ground all spice
- ¾ grated nutmeg
- ½ tea ground cinnamon
- ¼ ground cloves
- Zest and juice of 4 limes
- 1 4 to 6 lbs chicken cut into 8 pieces
Mushroom and Chicken Risotto

1. In a large pot, heat the butter over moderate heat
- If you're using canned chicken broth to make risotto, be sure it's low-sodium. The broth reduces at the same time that it's cooking into the rice, and regular canned broth would become much too salty.
- INGREDIENTS
- • 2 tablespoons butter
- • 1/2 pound mushrooms, cut into thin slices
- • 2/3 pound boneless, skinless chicken breasts (about 2), cut into 1/2-inch pieces
- • 1 teaspoon salt
- • 1/4 teaspoon fresh-ground black pepper
- • 5 1/2 cups canned low-sodium chicken broth or homemade stock, more if needed
- • 1 tablespoon cooking oil
- • 1/2 cup chopped onion
- • 1 1/2 cups arborio rice
- • 1/2 cup dry white wine
- • 1/2 cup grated Parmesan cheese, plus more for serving
- • 2 tablespoons chopped fresh parsley
GRILLED PRAWNS WITH HABANERO-TOASTED GARLIC VINAIGRETTE

Heat the grill to high or heat a grill pan over high heat

- • 20 prawns, shells on
